I used to make this quite often, but I guess we got tired of it. I'll try it again soon.

BEEF QUESADILLA PIE

1 lb. ground beef

1 c. salsa

1 - 4.5 oz. can chopped green chilies

2 pie crusts (I use Pillsbury)

4 oz. cheddar cheese, shredded

1/4 c. ripe olives, sliced

Optional toppings: shredded lettuce, chopped tomatoes, green onions, sour cream or guacamole

Brown beef; drain. Stir in salsa, olives and chiles. Place one pie crust on greased cookie sheet. Spoon on beef mixture 3/4" from the edge. Sprinkle with cheese. Top with second crust and seal edges with a fork. Cut slits in to top to vent. Bake in preheated 425 oven for 17-27 minutes or until crust is brown. You may have to put foil around the edges of the crust. Serve with toppings.
