Spicing Up Crab Salad

Hello all-- I bought some canned crab because it was on sale; not the best stuff by any means but the price was right. After rinsing it I stirred in some canola mayo and chopped celery. However, it has absolutely no flavor at all, really bland. What can I add to spice it up?

Here is my recipe for the dressing for a Crab Louis Salad:

Crab Louis Dressing:

2/3 cup mayonnaise
1/3 cup chili sauce* (medium)
2 green onions, minced
2-3 tsp lime or lemon juice
1 tbsp prepared horseradish
dash of bottled hot sauce or cayenne, to taste
1 tsp Worcestershire sauce (optional)

Combine all ingredients and mix well.

*It is best if you make your own chili sauce from dried chilies, but if you must buy the chili sauce in a can, get one that does NOT contain vinegar or tomatoes. La Victoria is a good brand, and it has a pure chili flavor, although mild. Chili must be the main ingredient in the chili sauce for this recipe. I make my own chili sauce using Ancho, Pasilla, and Guajillo chilies. The only other ingredients are water, salt, and garlic, and the garlic is optional.

To make the Crab Louis Salad, make a bed of lettuce on each individual plate, put half an avocado on that, and place the crab on top of the avocado. If you do not have avocado, you can substitute cooked asparagus. You can then add whatever other salad ingredients you want around the avocado and crab - I generally add tomatoes, hard boiled egg, chopped scallion, sliced mushrooms, and sometimes sliced black olives.

Since you already have mayo in your crab, you can omit some of the mayo in the salad dressing and still use it.

jkom, that's funny, my mother loved pickled pigs feet, and their similar product, pickled pigs knuckles. The person who taught her to eat them? My Aunt Amy, whose real name was Yoshiko and who came to the States with my Uncle Chuck, he met her and married her while he was in the service stationed in Japan. I always liked liver, although I seemed to be an oddity among my friends for it. I still like liver with bacon and onions, although I seldom eat it now on the advice on my doctor. Peppi, all of those things are also available here, and none are considered particularly odd. In fact, Jiffy muffin mix is made here in Michigan, and I've always got canned salmon, canned sardines and canned smoked oysters in the pantry. I don't particularly like the oysters, but Elery loves them. I don't really like headcheese much either, truthfully, but I can get it and I've eaten it. Ashley still likes the Mrs. Grass' chicken noodle soup in a box as well as the Vienna sausages in a can. So, although I'll eat liver and headcheese, I think "non-dairy creamer" is weird, how can it be creamer, but be non-diary? I haven't figured out yet what exactly Cool Whip is, but my brother eats it frozen, like ice cream. Annie

We are getting at least a foot starting late tonight...snow day tomorrow. On top of an existing foot or more so our driveway is getting very narrow! I ground some spices last night for an Adobo chicken dish. Made a big dutch oven version to have storm leftovers. The spice mix was a blend i just do by eye, about 3/4 cup total, then divided it and added smoked paprika and more dried chilis for some pork tips i need to roast/braise for pulled pork. I get storm anxiety about loosing power, so i need some things already roasting or resting when it hits. I'll start some bread tonight. I do save and re-wash old spice containers. But mostly use the French style working glass jars. I've had some since college and Costco has them now so i am stocked up. I make my own mustards, mayo and cocktail/ketchup style sauces so they are the most handy. Wide tops and snap-on lids. Great for salad dressings and sauces. I use ball jars for grains and seeds. The French jars are great that you can use a sharpie to label the tops and comes right off with a damp edge of a cloth with a bit of BarKeepersFriend powder. Penzeys has whole spices. I was given some spice mixes as a gift and never used them. I'm looking at one right now and it says salt, sugar, black pepper as the first three ingredients for a spice rub. Then paprika, nutmeg, sage, cayenne and red pepper. I have all that and so much better fresh ground. I just got this new batch of jars last week.

Lou, I have a similar recipe that I use for deviled crab, and I have also substituted canned tuna for the crab with good results as well. It is also baked and then broiled. I'll have to try the salmon recipe, although I really like Marilyn's fresh salmon cakes, and I had no problem with hers falling apart. I'll have to look at her recipe again. I have a feeling now that it was the type of bread I used, as rococogurl suggested. And the recipe does call for fresh bread crumbs as opposed to dried ones. The end result was still very good, even though it was difficult to get them to stick together. I'm considering adding a bit of potato starch to the insides to see if that will make them "stickier". Carol, I had saved your recipe before (it was one of only two that I had saved), but I neglected to look at it before I started. I'll try yours next time, as it looks really more like what I wanted, which is why I saved it in the first place. As for the recipe from the Anapolis native (I saved that one also) - what is regular mustard? My first thought is that it is dried, but it might mean prepared mustard. Crab meat is so cheap right now that I will be making more variations. The first batch of cakes I did not refrigerate, but the second batch had been refrigerated over night, and it had the same problem. You could use the remoulade sauce from this seafood salad recipe and just add your pasta, crab, shrimp and tuna. Mix all of the ingredients together. Taste and adjust to suit personal taste. If you like Horseradish, add more, or more mustard.

Greetings! I love crab salad piled on top half an avocado. I use minced tarragon, red bell peppers, celery, and lemon zest. Also add a bit of Old Bay seasoning along with a bit of salt and pepper.

This is a great way to spice up crab salad. The addition of serranos, papaya and cilantro is great!

Lemon juice!!....must have lemon in any crab dish.
And a bit of hot sauce....don't want to completely hide any crab flavor.
