I'd vote for option 1 or 2, with at least 300 total combined wattage lights, and a dimmer switch so that you can adjust total light output based on the seated area. That's what I've done in a similar situation and it's worked well.

Builders always center the chandy in the room even when there's a door(way) in the way! Except mine, that I had him move the chandy to where the table was going to be and then they centered the sconces on the wall instead of behind the table (sigh). Anyway, unless you're prepared to rewire with light box and patch/paint the ceiling (and you can't "bury" a junction box so it could mean ripping out a lot of the ceiling), just live with it. Maybe it's not a big deal since you're remodeling anyway? If you don't move it and it really bothers you, you can swag the light over.

It might work in some settings, but what I really can't take is the combination of the many llow lights and the table treatment. That might work on a console somewhere, but as I said, it might be perfect thie Thanksgiving.

I believe Home Depot and Lowe's sell standard replacement parts for light fixtures like that internal mounting strip. I think I saw in one of them (don't remember which one) screws with decorative heads in different colors - black, bronze, nickel. Also, if you don't find a matching color, you could use Rustoleum bronze paint on the screw heads. I have 6 chandeliers in my home that were bought second hand. I think I had to buy internal metal strips for 3 or 4 of them and find a matching canopy with screws (decorative satin nickel heads) for one of them. I got a chandelier from Goodwill in a similar satin nickel finish - ugly and with a cracked glass shade but it had a canopy part that fit my chandelier. I used the canopy part and threw away the rest of the Goodwill chandelier.
