There are as many recipes for gumbo as cooks in the south. I've been making this one for 20 years. It makes an enormous amount, but I don't know how to reduce it. So plan a party (mardi gras works) and enjoy. The recipe is written as it originally appeared, with some changes by me over the years. I apologize for the size of picture. Over the years, I have given out this recipe countless times. However, I have found most of my friends simply want to buy the ingredients and cook it together the first time.

Gumbo for 30 Men
(inspired by recipe by Miss Joyce Byrd, Home Economist from Mississippi, 1974)
Prepare Chicken:
Place a 3-5 lb chicken in large pan and cover with 12 cups of water. Simmer until done. Save the broth (youll need 12 cups, so add a cup of chicken broth to make up for evaporated amount and to add flavor) When chicken has cooled, coarsely chop (pieces should be relatively small). Can be made a day ahead.
Chop vegetables:
3 1 lb cans tomatoes (I use whole, unseasoned)
4 medium onions, cut in quarters
½ green pepper, cut into thirds
6 ribs celery, cut into 3 inch sections
6 cloves garlic
Break and drain the tomatoes to remove juices. Divide the vegetables into three mixed batches and process each batch in a food processor until it looks like coarse oatmeal. After processing, place batch in a colander to drain. Place drained mixture in a bowl and add:
¼ cup Worcestershire sauce
1 ½ tsp liquid crab boil
1 tsp cayenne pepper
2 tsp black pepper
2 Tbs salt
5 bay leaves
½ tsp rosemary
2 Tbs parsley
Refrigerate this mixture until ready to use (can be made ahead, flavors will only improve)
Make roux:
2 cups flour
2 cups oil
In a heavy duty pan, heat oil slightly on stove over low to med heat. Slowly add flour, stirring to incorporate well. Continue to cook, stirring constantly, until the gumbo is the color of milk chocolate. (about 20 min. +/-) It should smell a bit nutty and complex. If it smells scorched, toss it and begin again. Remove it from the heat.
Combine liquids:
In a large stockpot, (12-15 qt capacity), place 12 cups of chicken broth and 1 8 oz can tomato sauce. Boil for a few moments to incorporate. Add the vegetable mixture to this liquid and reduce the heat to simmer. The roux gets added next. IF THE ROUX IS HOT, IT WILL SPATTER DANGEROUSLY. I always do it this way, but be aware that it will bubble up ferociously. Be very, very careful when adding it (slowly) and face the roux pan away from you as you spoon it in. Mix it with a wooden spoon and stir occasionally to keep the bottom from sticking.
Add the chopped chicken to the mixture
Prepare Okra:
1 lb bacon
2 16 oz bags frozen okra
Cut bacon into pieces and cook until crisp. Drain on paper towels and reserve about ¼ cup bacon drippings in pan. Add the okra and cook until heated through. Add the okra and the bacon pieces to the gumbo.
At this point, you should have an extraordinary amount of gumbo. If it is for a large party, you can add shrimp and crab meat about 10 minutes before serving (I use precooked shrimp with the tails on). For this amount, the recipe calls for 4 lbs of shrimp and 2 lbs flaked crabmeat. We suppliment fake crab and one can of crabmeat. If I am not making this for one event, I will freeze it at this point without adding seafood.
Usually, I ladle about 5 scoops of gumbo and put it in a Ziploc freezer bag, remove the air and freeze on its side. It heats beautifully in either the microwave or on the stovetop.
I serve it over rice with salad and crusty bread for dipping.
