RECIPE: Great cornbread recipe

Onion Supper Bread

1/2 cup chopped onion

2 Tbl butter

1 6 oz pkg cornbread mix --Mexican cornbread will be great as well

1/2 cup sour cream

1/2 cup shredded cheddar cheese

Saute onion and butter

Prepare cornbread by pkg directions

Spoon into a greased square pyrex dish. Sprinkle with onion.

Combine sour cream and cheese, spoon over onion. Think I'll combine. Bake at 400 for 25 minutes or until lightly browned.

Let stand a few minutes before cutting into squares.

Enjoy!!

Gonna make chicken/sausage gumbo this weekend, and think cornbread will compliment the gumbo.

Sounds great!

I use the Martha White yellow corn meal mix. I basically follow the directions, but I substitute buttermilk for milk, and I add a small can of whole Mexican corn, drained, and then add the shredded cheese with a couple of drops of hot sauce. Sometimes, I'll add pork cracklings and/or jalapeÃ±os. I pour the mixture into a very hot cast iron skillet that has a little bacon fat in it and cook for the given time on the package.

I serve mine with pinto beans or black beans. Oh, and yes I realize this isn't a heart-healthy recipes, but it is very easy and very good

This really is good!

I make something similar, but make the cornbread using a can of creamed corn and an egg -- sometimes I'll add some diced green chilies to the batter.

I also saute a whole diced onion in a little butter first, then use about 1 cup each of sour cream and grated cheese that is gently combined with the onion and spooned on top of the cornbread batter. I usually reserve a bit of the cheese to sprinkle on top but it's not necessary.

It's more like a spoon bread and definitely not health/diet-friendly...but it's always a big hit when I make it for gatherings!

I've posted this one a couple of times before. It is a really good non-sweet cornbread. Real Cornbread From Butter Beans to Blackberries by Ronni Lundy 4 tablespoons drippings 2 cups fine ground white cornmeal 1 teaspoon salt 1/2 teaspoon baking soda 1/2 teaspoon baking powder 1 large egg 1 and 1/2 cups milk or buttermilk Turn the oven on to 450 degrees. When it starts to get hot, put the drippings in a 9 inch cast iron skillet (or small cake pan, but a skillet is what you really want). Put the skillet in the oven and let it get really hot while you mix up the batter. Mix cornmeal, salt, baking soda and baking powder together well in a bowl. Add the egg and milk and stir until just blended. Don't beat. Remove the skillet from the oven and very carefully swirl the drippings around the pan to coat the inside. Drippings should be bubbly. If you're using butter and it's browned a bit, that fine. It'll make the cornbread yummy! Pour the drippings into the cornbread batter, stir just enough to incorporate, pour the batter back into the skillet and pop into the oven. It will take 20-25 minutes for it to turn brown around the edges and get firm in the middle. Remove and turn upside down on a sturdy plate to turn the cornbread out. Try some sriracha. It'll heat up anything. Next time you make it, though, try using this cornbread recipe as a starting point to which you add all the goodies. In general, you have the choice of making a savory cornbread (no sugar, little or no flour) or a sweetish corn-muffin type cornbread (sugar and flour added). You'll find partisans on both sides. I personally prefer a non sweet cornbread, but chacun a son gout. Without meaning to make the Cornbread Holy Wars erupt again, my favorite recipe for a savory (as opposed to sweet) cornbread is from Bernard Clayton's New Complete Book of Breads. I use this recipe when I make cornbread dressing for Thanksgiving; a quadruple recipe just barely fits into a 5 quart KitchenAid mixer bowl, and into an 11 x 14 pan. Absolutely delicious. If you have access to freshly ground corn meal, it'll be plenty sweet. So try to buy your meal in a store that seems to have a good turnover of corn meal. So that's probably NOT in a gourmet store. 2 eggs, room temp 2 cups buttermilk, room temp 1 tsp baking soda 2 cups white cornmeal (but yellow is okay, too) 1 1/2 tsp salt Preheat oven and greased baking utensil (skillet or 9 x 9 pan) to 450 while mixing batter. In a small bowl beat the eggs and mix in the buttermilk. In a mixer bowl, mix the baking soda, cornmeal and salt. Pour in the egg-buttermilk mixture and mix well until smooth. Pour batter into the preheated pan, return to oven for 20 to 25 minutes. It's done when a knife inserted into the center of the pan comes out clean & dry. Kayjones, Your recipe said one Jiffy CB mix and one Jiffy cake mix. Glenda's said 1 CB and 2 Cake. So it is 1 and 2, right? I want to make this, but don't want to mess it up. Krogers didn't have any Jiffy cake mix when I was there the other day. I'll look at WalMart next time I'm there. I really want to try this. Sue

Carson's Mimi...I told you I posted this...and I did, but on FB :) and then I remembered we aren't friends on FB :) So here it is! Cornbread Salad and Cornbread Salad I put both recipes, so you can see how flexible the recipe is. I don't use green peppers at all, only the red, orange or yellow. I used one can pinto beans and 1 can black, but you can change all those around however you want. The dressing I use is always 1 cup sour cream, 1 cup mayo and the buttermilk ranch mix. I think it would be REALLY good with diced fresh jalapenos, but I wouldn't bring it that way for a big group.

I make the regular cornbread using the recipe off the box. And then add some chopped broccoli and chopped green onions and sometimes I add a bit of sharp yellow cheese. It does not raise as much as the regular cornbread and so I usually put it in a muffin pan and make Broccoli Cornbread Muffins. It's delicious.

My DD used to use the corn bread mix to make this casserole when we had a houseful of hungry teens to feed:

CORN DOG CASSEROLE (12 servings)

1 cup thinly sliced celery
1 1/2 cups chopped onions
3 Tbs. butter or margarine
1 1/2 lbs. hot dogs
2 eggs
1 1/2 cups milk
1/2 tsp. sage or poultry seasoning (I only use 1/4 tsp.)
1/4 tsp. pepper
2 packages (8 Â½ oz. each) corn bread/muffin mix
2 cups (8 oz.) shredded cheddar cheese, divided

In a skillet, saute celery and onion in butter or margarine over med-low heat until soft but not browned. Place in bowl; set aside.

Cut hot dogs lengthwise into quarters, then cut into thirds. In the same skillet, saute the hot dogs for 5 minutes or until lightly browned; add to vegetables. Set aside 1 cup of mixture.

In a large bowl, combine eggs, milk, sage and pepper. Add the larger quantity of the hot dog mixture. Stir in corn bread mixes and 1 1/ 2 cups of cheese.

Spread into a shallow greased 3 quart baking dish. Top with the 1 cup of reserved hot dog mixture and 1/ 2 cup of cheese. Bake, uncovered at 400 degrees for 30 minutes or until golden brown.
