Mandarin Orange Cake

Hi everyone,

As I type this post, the mandarin orange cake is baking in the oven. It's such an easy recipe! Once it's done baking, it'll be time to make the brown sugar glaze, which is brown sugar, milk, and butter.

It's looks delicious, Brad! When is the reunion? Please give us a report afterwards. Are you also taking your Gram's lemonade? It's so hot/humid I'm betting that lemonade won't last five minutes! Wish I had a slice of that glazed cake for later tonight... :)

Hi Mary, I'd be more than happy to share my Mandarin Orange Cake recipe! Mandarin Orange Cake 2 cups flour 2 cups sugar 2 eggs 2 tsp. vanilla 1 tsp. baking soda 2-11 oz. cans Mandarin oranges, undrained Frosting: 1-15 oz. can Mandarin oranges, undrained 1 pkg. dry instant vanilla pudding (1 small box) 1-8 oz. container Cool Whip Preheat oven to 350 degrees. In a large bowl, combine flour, sugar, and baking soda. Add eggs and vanilla; mix until well blended. Stir in 2-11 oz. cans Mandarin oranges with the juice. Pour batter into a greased and lightly floured 9 x 13 inch baking pan. Bake for 30 minutes or until toothpick inserted in center comes out clean. Frosting: Blend together 1-15 oz. can Mandarin oranges with juice, 1 package instant vanilla pudding, and 1-8 oz. container Cool Whip. Chill for 2 minutes (or longer) until mixture has set a little. Spread on cooled cake. Mom got a stand/upright mixer some time ago (a year or so ago) from Ginny's and it's been a big help in doing cakes, cookies, and other desserts! And I don't act at the theatre, I'm more behind the scenes helping clean and put up sets on the workdays. Not sure when I'll be learning to drive, but maybe it'll be sooner than later. Annie, LOL well, I wouldn't go that far as everything we ate at the party tonight was delicious! There was a lasagna, shrimp and cocktail sauce, assorted flavors of hummus, tortilla chips, brownies (I didn't have one lol), crab balls, melon balls with prosciutto and something else (I forget-I didn't eat one of those, and some buffalo chicken dip (which was my first time trying it and it was delicious!). There were also assorted beverages (beer and wine for the alcohol, lemonade, iced tea, soda, and water for the non-alcoholic beverages). It was very good. Brad AKA Moonwolf

I can visualize how good that is. On the 4th we spent the evening with old friends and Betsy had made a mandarian orange cake. It was three layers with a Kool Whip icing that had pineapple and coconut in it . Icing between each layer and on top,, no icing on sides, kept in the refrigerator. It was so cool, so pretty and not terrible sweet. It was perfect for a later dessert with coffee. I had never eaten mandarian orange cake before.
I came home with the recipe it is on my soon to make list.

Tricia, my reunion is a week from today and for that I'm making the lemonade (2 gallons worth) and two types of cobbler-one peach, one blackberry. Of course, a container of whipped topping and a can of Reddi Whip will be in tow also lol.

Shirl36, I got the recipe from online. I don't care much for pineapple or coconut, so I was glad when I found this glaze. I may try it sometime with the icing you mentioned, but with mandarin oranges instead.

I had a little taste of some fallen crumbs. It's very, very moist and it tastes delicious!

I make one with the frosting like Shirl described for one of our desserts for Easter dinner every year.

This cake is just for my parents, myself, and my neighbors. I also made a batch of my gram's lemonade to share with them, too.

Well, it looks like I won't be giving them their pieces of cake until next weekend. Luckily, I read that this kind of cake can be frozen :-). The lemonade, however, looks like we'll have to drink, which is no problem lol.
