Picnic ideas to go with blueberry cucumber salad?

I'm planning a picnic Sunday with friends and I want to try out this recipe I've been meaning to try since last year when I saw it at Wegman's. It's blueberry cucumber feta salad. I just don't know what to serve with it. It has to be something that I can serve cold at a picnic. I would prefer vegetarian, although I could go with a little bit of meat, just not beef. Anyone have any suggestions?

Cucumber & Blueberry Salad with Feta

Ingredients

3 cucumbers, peeled, halved lengthwise, seeded and sliced thinly (half moon shape) (about 4 cups)

1 pint (2 cups) blueberries, rinsed and picked over

Salt and pepper to taste

1/2 cup Wegmans White Balsamic Vinaigrette (Produce Dept)

3 Tbsp thinly sliced Food You Feel Good About Fresh Mint Leaves

1 cup (about 1/4 lb) Wegmans Traditional Crumbled Feta Cheese (Cheese Shop)

Directions

Combine cucumbers and blueberries in large bowl. Season to taste with salt and pepper.

Add white balsamic vinaigrette, mint, and feta. Toss gently to combine.

cold poached chicken breast halves...cut into a fan shape, with quarter of a red pepper filled with maybe egg salad....or perhaps crab salad. I would have said fill the red pepper with cottage cheese seasoned with some chopped green pepper...but think you have enough with the feta.

I'd do cold poached salmon.

I found this recipe while looking for ways to use cucumbers early this season. It is a simple recipe, takes very little time to prepare and it's very tasty. (Provided you like curries.) Spicy Indian Chicken And Mango Curry Recipe INGREDIENTS: 2 medium mangoes, peeled and sliced, divided 1 can (10 ounce size) coconut milk 4 teaspoons vegetable oil 4 teaspoons spicy curry paste 14 ounces skinless, boneless chicken breast halves -- cut into cubes 4 medium shallots, sliced 1 large English cucumber, seeded and sliced PREPARATION: Place half of the mango slices into the bowl of a blender with the coconut milk. Blend until smooth and reserve for later. Heat the oil in a large pot over medium-high heat. Stir in the curry paste, and cook until fragrant, about 1 minute. Add the chicken and shallot; cook until the chicken is done and the shallots have softened, about 5 minutes. Pour in the mango puree, and cook until heated through. To serve, stir in the remaining mango slices and cucumber.

Thanks, Michael/Lyra! (grin) she's darned expensive and time consuming for an imaginary child, sheesh. Nope, L, no plastic containers of potato salad in the refrigerated section. I suppose I should be grateful, I did find a plastic container of that ground up bologna and pickle with mayonnaise "sandwich spread" once. The grocery store originally had a small bakery and deli, with rotisserie chickens, but apparently those items spoiled before they could be sold and became a big loss, so now I can get a cold pre-cooked chicken on the weekends, donuts only from Sara Lee and sliced lulnch meats and cheeses. They have a small "hot" section" at lunch time, usually chicken strips, corn dogs and pizza rolls. I can get canned Bush's baked beans, though, and ice cream. Two brands, either Country Fresh or Hudsonville. tricia, I never said I was a manager. I'm a Mom and a farmer and at work I'm "Angela, The Pitbull". My employees know their jobs well, so I don't delegate very much, they just do their jobs and I make sure they get paid. I spend most of my time doing legal research, drafting briefs and motions and trying to make sure the criminals get locked up, while simultaneously trying to wipe the images of their abused wives/battered children out of my brain, along with the memory of the autopsy photos and the drunk driving victims. I'm not good at delegating, I'm good at doing whatever needs to be done to help those who need it. That, and I'm good at cooking, so i do what I'm best at. At least I enjoy the cooking! Annie

Thanks again. I've gone from no ideas to too many ideas! That's a much better problem to have. Islay, along with the things I mentioned above, I was thinking about the traditional Israeli salad or Greek salad. There are definitely some good tomatoes still around in my neck of the woods. Alex, that snap pea salad sounds great. Believe it or not, I was thinking of snap peas but for a dip not an actual salad. I know I'd devour the recipe you linked to. DC, I'd like to look at your salad recipe. The addition of carrots sounds interesting. Thanks again for your help. I've got time to mull this over and decide which would appeal to the most guests. On the slaw, you can put it all together the day before, and buy the pkg shredded. Make the dressing, put it in a cooler and add right before serving. Most everyone loves banana bread. This is my favorite recipe Sour Cream Banana Bread 1 cup sugar 1/2 cup oil 2 eggs 1 cup mashed bananas (2 medium) 1/2 cup sour cream 1 teaspoon vanilla 1-1/2 cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon salt Preheat oven to 350F. Grease and flour bottom only of a 9 X 5 loaf pan. In large bowl, beat together sugar and oil. Add eggs, bananas, sour cream and vanilla, blend well. Lightly spoon flour into measuring cup, level off. Add flour, baking soda and salt, stir just until dry ingredients are moistened. Pour into prepared pan. Bake at 350F for 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes. Remove from pan. Cool completely. Wrap tightly and store in refrigerator. Makes 1 loaf.

I'm sorry LPink, but even using my most wildest imagination, I cannot imagine cucumbers with blueberries.

Chicken gyros or any chicken combo wrap.

You can plate the ingredients for the gyros & let people make their own. That is what I do on the boat - and I serve it with the watermelon feta salad and people love it!

The salad sounds interesting! Let us know how it turns out.

It sounds strange to me, too, which makes it all the more appealing. Some of the strangest sounding foods have been the ones I've loved the most. I'm very interested in what else you will come up with for this picnic!

For picnics I like to take a large loaf of long crusty bread and hollow it out, then fill it. With anything. Since there's feta in the salad, I'd probably go with a grilled chicken/basil kind of thing, or maybe roasted veggies. If the bread is good and crusty, hollowing it out then wrapping it tightly after filling it up makes it much less messy.

Or if you aren't into sandwiches, how about premade skewers of grilled veggies and chicken?

Well, I eat fruit and vegetable salads (like mangos in coleslaw and that orange/onion/olive salad or pears and blue cheese) and I love feta, so I'm thinking it will be good, and pretty. I thot watermelon savory salad would be weird but a friend made some for a party once, and I couldn't stop eating it. The blueberry cucumber feta salad sure LOOKED pretty at Wegmans in the deli, and the recipe got good reviews.
