This is my grandmother's recipe:
Swedish Pickles with Fresh Cucumber:
1 cucumber (about 7 inches)
1/2 cup vinegar
2 tbsp water
2 tbsp sugar
1/4 tsp salt
dash of white pepper
1 tbsp parsley, chopped

Slice cucumber thin without peeling the skin and place in a glass dish. Mix vinegar, water, sugar, salt and white pepper thoroughly, pour over cucumber and sprinkle with parsley. Allow to stand 2-3 hrs in refrigerator before serving.
These keep for about a week in the frig. They were always my favorite growing up, visiting my grandparents in Sweden :)

If you make Tzatziki, make sure you use Greek yogurt if you can get it. It's fantastic. Really creamy, thick and rich, like a full fat sour cream. ( tried the Greek yogurt with honey in it and it is also divine. )

You can also use it to make a raita (like tzatziki but the Indian variant).

Or make cocktails like a Juliet and Romeo.

While visiting Russia and Finland, my daughter picked up the habit of putting sliced cukes in each batch of tea brewed for drinking cold. It gives the tea a refreshing edge.

speaking of beverages, a slice or two of cuke in ice water is very refreshing....

cukes are a great foundation for mixed veg juices....

cuke, red pepper, tom, and a little of a spicier pepper like hot banana.....maybe with celery.

Gazpacho is cooling and delicious.

I put em raw in sandwiches and pickle em too. Give the rest away.

Isn't it great to have cukes without "vaseline" all over them - or whatever that nasty stuff is on grocery store cukes.

Cold cukes make a great snack when you're really hot, just sprinkle a little salt & munch. No salad required.

Chop a cucumber and vidalia onion into pieces of desired size (some people like this more shredded, like slaw, some like bigger chunks.) 1 tsp. sugar, 1 Tbs. mayo, dash of salt & pepper. Stir, refrigerate for at least several hours, preferably overnight. Cold & refreshing in this heat.

I don't like the seedy inside part, so when I remove that, I use more cukes. I've always heard that's the part that makes people burp.

I've also been served fruit salad with chunks of cukes, delicious.

Cold cucumber soup. I like avocado in mine, but google to fine a recipe that appeals to you.

A number of Thai dishes I've had have cucumbers in them, sort of stir-fried. I think they add them toward the end. An interesting aside: many types of cucumbers make me burp (even some of the burbless kinds), but cooked cucumber does not. I think maybe that's why pickles never bother me either.

Yup, I was going to mention the Thai use of them as a semi-cooked veggie in dishes, but Sunnibel just beat me to it. Local Thai carry out place here does a really great sweet and sour with a semi-tomato-y sauce and crisp cucumber chunks, seeded but not peeled.

I found this recipe while looking for ways to use cucumbers early this season. It is a simple recipe, takes very little time to prepare and it's very tasty. (Provided you like curries.)

Spicy Indian Chicken And Mango Curry Recipe

INGREDIENTS:

2 medium mangoes, peeled and sliced, divided
1 can (10 ounce size) coconut milk
4 teaspoons vegetable oil
4 teaspoons spicy curry paste
14 ounces skinless, boneless chicken breast halves -- cut into cubes
4 medium shallots, sliced
1 large English cucumber, seeded and sliced

PREPARATION:

Place half of the mango slices into the bowl of a blender with the coconut milk. Blend until smooth and reserve for later.

Heat the oil in a large pot over medium-high heat. Stir in the curry paste, and cook until fragrant, about 1 minute.

Add the chicken and shallot; cook until the chicken is done and the shallots have softened, about 5 minutes. Pour in the mango puree, and cook until heated through.

To serve, stir in the remaining mango slices and cucumber.

They are supposed to be great for your eyes. Just slice a cool wedge and put over each eye. They fry them down here, but that doesn't sound good to me. My MIL used to soak them in salt water and drain them and then mix them with mayonaise. I sure could eat alot of them mixed with a little mayo!

Chop them with some onion, tomato, salt, oil, vinegar and a little grilled chicken and feta cheese, and maybe a little basil, and eat in pita or naan for an amazing sandwich.

Have an English tea party (or Harry Potter party) and serve cucumber sandwiches. Play croquet. Or soccer.
