With the gardening season well under way, there is an abundance of fresh vegetables available. Cucumbers are a favorite and I like to make quick pickles by putting them in a simple marinade for a short time.
Japanese cooks have countless types of quick pickles called tsukemono made from various fresh vegetables processed in various ways. It sounds appealing and I'm trying to get started with tsukemono. I have a book but that is information overload at my level of experience. I could use a few practical pointers from those of you who make tsukemono. Keep it simple please.
