Do you grind your own ''ground beef''?

On the Frys my hide thread, rachelellen mentioned that she grinds her own ground beef. Rather than hijack that thread I started a new one.

Those of you who do that, I have some questions.

What cuts to do you buy?

What kind of machine do you use?

Do you do it to save money? for quality control? for fat control?

Do you grind as needed or do you grind a bunch and freeze it for later use?

I'd love to hear about your methods, advice and experience.

Hey, I've started baking bread, maybe I'll get into grinding beef, who knows?
