Readinglady...Thanks for the B&B recipe

Carol, I made your Bread and Butters yesterday and they are very close to mine! I did not use the garlic because my original recipe did not call for garlic. Other than that I followed it to a tee. Thanks again!

Linda, (doucanoe) , go for it it really is very close to my recipe. Just make sure you do not let the pickles come to a boil once you add them to the boiling brine. Just warm them through and then do the BWB. Let me know if you didn't copy the recipe.

ooops , now that I think of it I may have asked and got the response from Carol over on Harvest.....better go there and say thanks too!

I just checked in on Harvest and saw your post. I'm so glad these came close to yours. I still hope your lost recipes turn up. It's so frustrating to lose those precious notations.

I used up the remaining pickling cucumbers for Carol's B&Bs and they look gorgeous.

Since this was an unplanned canning I had a little trouble with color. ;) No green pepper so I used sweet red pepper and no white onion so I subbed 1 large purple onion and a bunch of green onions but I think they look great.

Also Carol's recipe yielded 4 pints but 1 of my jars cracked during the water bath, but otherwise it was fun making the B&Bs!!

Have been working on a bottle of habanero sauce and bought a ghost pepper plant last week, jalapeno is just every day stuff. Have always liked the spicy ones but not just peppers, there are horse radish, wasabi, gingers and other pepper like condiments. Look under "Culinary herbs and spices" for the link to "Main article: List of culinary herbs and spices" in the link below that gives some of the spicy spices used. I have tried baking soda with little effect a mix of ascorbic acid and water may also help a little. The mildew happens rapidly and once you see a single yellow leaf, it has begun. I spray with a fungicide called Serenade, which works quite well. Its done every 7 days during the bearing of the cukes. Bees love the blossoms and I usually have many bees busy all day long. I go out and pick at sunrise as its a little cooler and easy to find them on a vertical trellis. The honey bees must be local as they are busy all day and the area sounds like a huge bee hive. They usually are just fine even if I am out there picking right next to them, as they are not very aggressive. I posted links above to web site for pickling cucumbers, and if you don't know how to get these links copied to an internet browser, just simply point at an end or start of the HTML line (above), and hold down the left mouse button and move to the left or right to highlight the whole line. Once highlighted, press the control key down while you then press the C key. Open a new browser page and remove the text at the window at the top. Or point to what text is there, and then its highlighted, press the delete key. Position the mouse pointer in that window while you hold the control key down and presk V to paste the previously copied text. Press enter. Then it will show you the web page link. "Return to boil" overcooks B&B pickles?

I'll have to try the recipe you suggest. The one we used was: 1 gallon cukes sliced thin 8 small onions sliced or chopped 1 sliced or chopped green pepper 1 qt cold water 1/2 cup pickling salt 5 cups vinegar 5 cups sugar 1 tsp. cloves 2 tsp. mustard seeds Soak cukes+onions+peppers 3 hours in water+salt. Drain. Add veggies to boiling vinegar+sugar+cloves+mustard seeds. Cook 5 to 10 minutes after liquid returns to boil. Pack into jars in the usual manner. I'm starting to suspect my husband may have lost track of time in the cooking, since this recipe worked fine last year. He cooked them at least 10 minutes, *perhaps* longer (which would explain a lot).

Seeds of most tropical American sages of horticultural value are really hard to come by because so few areas have optimal pollination conditions. Exceptions are Salvia mexicana, S. miniata, and annuals like S. coccinea. The calyx (chalice) that holds the seeds is very ineffective from the seed gatherer's point of view, since seeds are allowed to fall out soon after ripening. This makes seed collecting a rather labor intensive effort. An even bigger problem is that bumblebees interfere with seed setting by the abnormal way they collect nectar, puncturing the flower at the base rather than going down the throat. If the ripe seeds get damp, the glutinous seed coat swells and mold spores embed and attack the seed. Redrying the seed does not help. Lots of seed with these infected seeds tend to damp off. Finally, varieties like Black & Blue guaranitica don't come true. This is especially true of greggii and microphylla forms.

I like that color. Those pickles look be-yoo-ti-ful!

I'm sorry about that lost jar. Thermal shock (bottom falls out), Pressure break (vertical crack that forks and divides) or Impact break (straight out from point of shock)?

I always cringe when I see a friend returning jars and they're all clanking together in the bottom of a plastic sack.

The bottom fell out so it was thermal shock. I don't have many pint jars and it was one of my Kerr Vintage Jars that I mistakenly grabbed...durn!

It was so fun making the B&Bs and I can't wait to taste 'em!

There's nothing like a canner full of floating pickles. I know what you mean about vintage jars. Annie and I have talked about the jars we always keep at home and never give to anyone.

I still use MIL's old Kerr, Ball, Atlas, etc.

I have a couple of dozen of the squatty Ball Special pints I keep just for one old Farm Journal relish recipe. They never get passed on.

I just gave DH's cousin a bunch of narrow-mouth quarts because I just don't need them for canning, but it hurt a little to let go of the neat old Atlas ones (not to mention four cases of old blue and clear bail jars with rubber rings)and pre-war zinc lids. Still, there's no sense keeping them here in a "jar museum" when she can use them for canning and crafting.

Michelle, your B&B's are beautiful!! I think the red pepper looks better than the green. Sorry about the broken jar....I had one break last year with jam....icky, sticky mess in the canner. I bet they will taste wonderful! Great job!

Thanks Andi and Carol! I am very pleased with the appearance and hope they taste great. Sweet pickles are a favorite late night snack of mine!

Carol, I do have a question. I thought your recipe would yeild more pints and so had extra lids and seals boiling just in case. Can I reuse the seals even though they've been sterilized once or should I put them in the "Not for Canning Box"?

Don't you just love the old Atlas Jars! I have several and the glass is so heavy and thick compared to other vintage brands.

You can re-use the seals. I usually have one or two extra in the water just in case. I never can seem to manage exact numbers.

Just take them out, get them dry and they're ready to go the next time around.

Gorgeous!!!

I use red pepers in mine too, equal red to green. Love the look.

Took pics and will post when I am back in the land of high speed.

Michelle, I think those are very pretty, prettier with the red peppers than they would be with the green.

Sorry about the jar, I do that every now and then, like when I told Jessica that I always put cold jars into a hot canner and seldom get breakage. That's when I heard the crack and sure enough, the bottom fell out of a jar of those lemon/rosemary pickled beans. LOL

Carol and I HAVE discussed jars we keep and never use or give away. I have a dozen of those squatty short wide mouthed Ball pints that always get used for salsa because they are a perfect shape, but I never give them away. I keep the old Atlas/Sterling/Mom's/Everlast/Corning jars and only use them as a last resort and I never give those away either. (grin) I collect old canning jars, now THAT'S funny.
