Nesco Experts, Help Please...

So far I've made two lemon loaves, baked potatoes, and dinner rolls. As far as the Nesco goes to bake in, perhaps the 4 qt. isn't the best tool for this job. I've tried a ''gold'' nonstick pan for the lemon loaves, baking potatoes on the rack, and used a glass pan wrapped in an aluminum sling for the dinner rolls, because the pan was a tight fit.

The first lemon loaf browned a lot, so for the second I turned down the heat 25 degrees (from 375 to 350). That turned out slightly better, but not substantially. The baked potatoes were perfect, as I would expect. The dinner rolls didn't brown very well, except on the bottom which surprised me a bit. (I can only guess the aluminum sling helped that, so I wonder if I should wrap the top in the aluminum ''handles'' for browning?)

There's no doubt in my mind this would be great for meat, vegetables, soups, stews. Does anyone have any tips/tricks for baking in a small nesco without the fan? Would a light colored aluminum pan work better than a medium or dark pan inside, when using it as an oven for baked goods? (To promote less browning around the sides where the heat is?) Perhaps a smaller sized glass pan without an aluminum sling? Obviously it seems to work better for a mass of something, than individual portions.

I want to figure this out, if it takes using it everyday for the next three months or until summer is over.
