Busy Kitchen Day (With Upcoming Pictures)

Hi everyone,

Today is a busy day in the kitchen, but they are extremely easy recipes so it's gonna be fun :-). Today, mom and I are making the Cuppa Cuppa Cuppa Peach Cobbler and we're also having my favorite dish: fried green tomatoes (with Vidalia Onion Dressing) for supper! Pictures to come!

Linda C, I am so excited! The cake/cobbler's in the oven and the tomatoes have been sliced (you can let them set for 6 hours to draw the water out) and the dressing is made and chilling.

I managed to get quite a bit done today --- not tooooo hot. I planted a new Meyer Lemon; I figure it can survive anything after sitting in the full HOT sun in a large plastic pot all summer at the nursery. I cleaned up my gardening bench this afternoon --- left for 10 days and the roof rat took over again.... what a mess. Thank you, Wildflower and Karyn, I went out last evening and brought the blooms in, and I do in fact have a CG AND a JY. Then I watched the weather forecast for last night. We had our first freeze. So, I brought my new buckets in the kitchen, got my loppers and rose pruners out, and started bringing in brug trunks and limbs. Now my kitchen counters look like several of your greenhouses. Glad that I figured out last week what "above the Y" meant, and now I have above the Y cuttings, as well as 4 foot sections of the trunks in a new white garbage can. I left some trunks and blooming parts on the plants in case the 31 degrees temp does not put the plants into dormancy. Now I feel more a part of the brug experience, a process that only started this past spring. This is such fun. I'm so glad that there are so many delightful people on this forum. My electrician (aka hubby) finally got my second pendant hung over the island today!! You may or may not remember when I posted this pic back in September or October Right after I built and installed my temp island. The area looked, quite frankly, somewhat ridiculous. An 8 ft long island with this one lone pendant hanging over one end of it. The reason it was there was because that was an existing box that used to have a fluorescent light box on it. I knew I wanted to put in another box ran off of the first one and install 2 pendants, well, today it finally got done!! Yay!! Not only is it aesthetically pleasing but there is soooo much more light over my island now! Can I just mention again how much I love the smoke colored glass in these pendants? Also, in keeping with our weekly thread "no accomplishment is too small", I tracked down some spare 2x6 and cut blocks to fit in the old window spot. I also got the piece of drywall cut to install. The only reason I haven't yet is because I am thinking of creating a "time capsule" to put in the wall before I close it off. Chances are that spot will be opened again at some point in the future, it is where the MIL quarters and main house meet. Even if I never open it back up, I thought it would be cool to leave a "treasure" there for someone to discover in the future. Tell me truthfully, does that sound really lame or kinda cool?

Sounds good Brad. I've never had fried green tomatoes and I'm even from the south, shame,shame! Please do tell how you make them. Do they taste like fried eggplant?

I have never eaten fried eggplant, so I wouldn't know how they would taste LOL. They have a sour taste, not like a fully ripe tomato. They are very easy to make. Besides the tomatoes, it's flour and/or cornmeal (bread crumbs work too), milk and/or egg and oil to fry them in. Slice them about 1/4 inch thick, salt both sides of tomato slices, dip into beaten egg/milk mixture, then into breading. Fry in hot oil until golden brown. So yummy. They also make Fried Green Tomato batter (which I think is much better).

Here are the finished tomatoes. They were pretty good. I'll try and get a picture of the cobbler tomorrow.

Yum, Brad, I love fried green tomatoes, and haven't had any this year yet. We always had them for breakfast.

Your FGT's look great and I would love your Vidalia onion dressing recipe as well as your cobbler recipe.

Thank you, everyone!

The cobbler is very good! I had a piece not too long after it came out of the oven. Yum :). Here are the recipes for you, trixietx,

Vidalia Onion Dressing

1 cup onions, diced
2 T. rice (or red) wine vinegar
1/2 cup mayo
2 T. brown sugar

Mix all ingredients and let chill. Serve over fried green tomatoes or use as a dressing for cole slaw.

Cuppa Cuppa Cuppa Cake (or Cobbler) Courtesy of Teresa :)

1 cup self-rising flour
1 cup sugar
1 cup milk
2 cans sliced peaches in heavy syrup (15-16 ounces each)
1 stick real butter

Preheat oven to 350 degrees. Place butter in Pyrex baking dish (or similar). Place into oven while it preheats and take out once melted. In the meantime, whisk the flour, sugar and milk together til mostly smooth. Pour over the butter in the baking dish. Spoon the contents of both cans of peaches over the batter. Bake at 350, until golden brown and crust is done (50-60 minutes, depending on your oven). Serve hot with a scoop of ice cream for a wonderful treat!

I ate my piece of cobbler with some Cool Whip and it was heavenly. :) Enjoy!
