Help - will have 20 picky people at my house Sunday

So my MIL talked me into hosting the lunch after our daughter's baptism at our house instead of doing the planned taking everybody to a restaurant (yes more expensive, but less work for us). She thought it would be hard to find a place in our small towns to have everybody and she has a point there.

Now I have to clean the house before and after and cook something.

I think I came up with a good idea since we have so many that are picky eaters, kids, one vegetarian, one pregnant, and me (who is type 1 diabetic and B-feeding a lactose intolerant baby). A restaurant would have been much easier.

I'm considering a sandwich buffet as people can grab what they like, but need help on what to have there.

I'll have:

veggie tray with dip

Tuna Salad

Chicken Salad

Sliced ham and turkey

Two kinds of sliced cheese

Rolls and sliced bread

Chips

Italian Pasta salad (non-mayo kind)

Condiments:

Mustard

Mayo

Butter

Dessert:

Swedish Princess torte - cupcake sized individual

What else do I need or what other side could I add that is easy to make as well.

Any and all suggestions/recipes are appreciated. If you think I should do something else altogether let me know and please give me other ideas.

Also how far ahead can I purchase cold cuts?
