I'm making an angel food cake for DH birtday. I would like to serve it with strawberries. how can I prepare the berries. I plan to asd sugar to them. Should I cook them a bit?
I don't cook them! Whan I do angel food cake and strawberries, I just cut wedged from the cake and spoon over strawberries that have been macerated with some sugar and a bit of vanilla. Several times I have made a pastry cream, split the cake into 3 layers and put pastry cream and strawberries between the layers and served witha dollop of whipped cream.
No, I don't cook them either, I just slice, let them sit a bit with sugar on them and then spoon them over slices.
Ashley likes the berries stirred into whipped cream, then she splits the cake into three layers and puts the cream/berry mixture in between as filling. It's pretty but I like it better with just the berries.
If you prepare the strawberries in advance, slice them and sprinkle with sugar, and let them sit for a bit, they will develop a nice sweet juice on their own.
I slice them, add sugar and refrigerate. This makes the juice flow. Then I pour off the juice, slip the strawberries into the freezer to chill, add cornstarch to the liquid, enough to make a very thick paste, and cook till it's good and thick. Immediately, I pour this thickened hot cornstarch mixture into the chilled berries and stir to combine. Then put in the refrigerator. This makes more of a "sauce" for the cake and doesn't leave the cake soggy.
This can be done with frozen berries, too. Just sugar and thaw them enough to be able to get some juice. Frozen berries seem to keep better in the refrigerator this way. Without it, they start to lose some color and get really limp and soupy. --Ilene
I haven't actually made this but I've had it many times and it is Yummy... It's a fluffy frosting...
This is my Aunt Tillie's recipe, word for word... lol
1 cup Strawberries ( any fruit ) 1 cup Sugar 1 extra large egg white
Dump it all into a large mixing bowl and beat forever... LOL
She never did tell me how long to beat it, just that it takes a long time... ( that's why I never made it... LOL ) I'm assuming that you beat it until it's spreading consistency... On the cake it looks like a fluffy thick butter cream frosting... She used to swirl it but it didn't have the peaks or the curlicues on top like a meringue.. Oh, it makes more than enough to frost the top and sides of a large angel food cake, you'll have some leftover..
I take most of the strawberries and mash them up pretty darn good, add sugar or splenda, let them sit for awhile. spoon over thick slices of angelfood cake and top with a couple of thick slices of strawberries. any left over mashed strawberries get spooned on top of pancakes for breakfast.
