Ack!! Recipe needed ASAP

This week I started baking for my niece and nephews for camping. The cinnemon bun cake and a poke cake. I just found out that one of my nephews is VEGAN and I have nothing for HIM. I do not have soy anything or apple sauce in the house right now and live far from town.

I need an easy vegan dessert recipe for him. I don't want him feeling like auntie left him out. I only have this morning to get this done.

these are fast and maybe you have the ingredients on hand?
Also, if you have coconut milk on hand and rice, you can make a quick rice pudding.

sapphires, I don't even like bananas, I don't even eat banana bread, but I eat this cake. Ashley says it's her favorite, the best she's ever had and it is darned good. It was posted on the Cooking Forum by a former poster, J. Garner, who worked as a pastry chef. Banana Cake (Rose Levy BerenbaumÂs Cordon Rose Cake) Jgarner-Cooking Forum (good as layer cake, elegant, delicate texture) mix together: sifted cake flour 2 cups sugar 3/4 c + 2 Tbs baking soda 1 tsp baking powder 3/4 tsp salt 1/2 tsp puree together: 2 large ripe bananas 1 c sour cream 2 Tbs or up to 1/2 c 2 large eggs 2 grated lemon zest 2 tsp (I left this out since I don't like the flavor of lemon with banana) vanilla 1-1/2 tsp soften: Butter 10 Tbs (5 oz) Add butter and half of pureed mixture to dry ingredients in stand mixer and mix at medium with paddle for 1-1/2 minutes. Scrape bowl and add rest of banana mixture in two batches, mixing 20 seconds after each addition. Pour into 9"x2" round pan (I just lined the bottom with parchment, no spray or butter) and bake at 350 F for 30 to 40 minutes. Cool for 10 minutes in pan and then turn out onto rack to cool completely. Hint: Use smallest amount of sour cream and 3 bananas for more pronounced banana flavor Cream Cheese Icing Cream cheese, softened 8 oz. Butter, softened 5 TBS (2.5 oz) Sour cream 1 Tbs Vanilla extract 1/2 tsp. Rum 1 Tbs Powdered sugar 1 1/4 C (5 oz) Process (yeah, the food processor) or beat cream cheese, butter, sour cream, and vanilla until smooth. Add powdered sugar and pulse until smooth. Here's an answer I found doing a Google search: "The most frequently asked question on this blog is why I use a mixture of half shortening (butter flavored shortening to be exact) and half butter in my cookies. And can people choose which one they want to use and exclude the other. You butter lovers, you! Here's the answer: Butter and Shortening both add different chemical properties to baked goods. This mostly has to do with their evaporation level and how they react to heat. Butter increases browning and adds a crisps texture to baked goods. It also evaporates more quickly, but then lends less stability to the finished product. Butter also has the best flavor. Shortening does not brown food nearly as much. It takes longer to evaporate and adds a more elastic texture to baked goods. So when I bake cookies I use a mixture of half butter and half shortening. Why? Because I get the best of both worlds. The butter helps to crisp the outside and the shortening helps your cookie retain moisture. So if you choose to use all butter, your cookie will turn out a bit more browned and more crisp, but may also stale or dry out more quickly. Accurate measurements make such a difference, don't they? = ) You have 30" more to work with- yay! - and that makes all the difference. That should give you enough room to add peninsula seating back in. Let me play with your plan some more today and see if I can find a happy medium between storage and counter space, especially prep space. Have you done a tally, including measurements, of all your kitchen items? Doing that in addition to grouping items by use will help you determine how much storage you need and where you need or want it. Your current kitchen has a lot of doored base cabinets, which aren't nearly as efficient in storage as drawers so you may find a new kitchen holds a lot more than you think it will. We didn't change our kitchen's footprint but because my cab storage is heads and tails better than it used to be, I have room to spare. Would you be okay if you only had one sink near the range? I know it's not nearly as convenient but given your kitchen's modest size, I haven't been able to come up with a plan that puts both sinks near the range that still gives you decent counter space for prep between sink and range. One more sink question. What is the minimum single sink size you'd be okay with? Shrinking your sink cabs to 27" (bowl would still be larger than either bowl in your double sink) would help. Side note: My knowledge of Kosher kitchen needs is limited since none of my Jewish friends keep a Kosher kitchen so let me know if I goof on something in that regard. Sena, I missed seeing your suggestion until now. Sara, Sena is one of the talented GWers who can provide elevation drawings. One of these days I'll learn how to use my Chief Architect program so I'll be able to do elevations but I haven't set aside the time to delve into the program.

24 hours is a extra long lime soak to begin with, 12 hours is the norm. So the longer in the lime they soak the harder the slices end up. You may well end up with pickle chips that shatter into pieces when bitten into. So your best compromise option is to do all the rinses and cold water soaks tonight. Get them out of the lime. Have no idea what recipe you are using or what is involved in the "2nd day process" but do get them out of the lime and rinsed at least once. Let them soak in the fresh cold water in the fridge over night and then rinse again a couple of times tomorrow and finish them tomorrow. Have you made limed pickles before? If so I assume you know the hazards of working with pickling lime and why use of it has declined sharply in favor of other methods? Better planning next time, yeah? ;-) Dave

I've made those chocolate oatmeal cookies and they're good but don't hold well for too long, IMO. They're great for like a weekend but not a full week.

This is a recipe an elderly lady gave me years ago. She was a good cook, but am not sure if I ever tried this. If I remember correctly, it was a recipe from the war years when sugar was rationed.

Simply Cake

1 cup orange juice
1 cup raisins
1/2 cup shortening (all vegetable)
1/4 cup honey

Soak raisins in juice for at least 30 minutes, then boil all above for 5 minutes and cool.

Sift together:

2 cups flour
1/4 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. nutmeg
1 tsp. vanilla

Combine flour mixture and raisin mixture and beat well. Then add 2 Tbls. orange zest and 1/2-1 cup black walnuts. (am sure you could leave out nuts.)

Bake at 350.

The recipe doesn't give any pan size or baking time.

Sorry! I just re-read and saw it is for camping. If none of the above work, google brings up many recipes if you put in vegan cookies. Good luck-hope you find a winner!

Classic Wacky Cake/cupcakes
Ingredients
1 1/2 cup flour (see below for gluten-free options)
3 Tbsp cocoa powder (optional)
1 cup sugar
1 tsp baking soda
1/2 tsp salt
1 Tbsp vinegar
5 Tbsp oil
1 tsp vanilla
1 cup water
Instructions
Preheat oven to 350F.

Combine dry ingredients in a mixing bowl and mix thoroughly.

Mix wet ingredients in a separate bowl and stir to combine.

Add wet ingredients to dry ingredients and mix until you get a smooth batter. Do not beat.

Pour into greased and floured pan (8" square or 9" round) or 12 cupcakes. Bake in oven until tests done - about 35 minutes for cake, about 20 minutes for cupcakes.

I always have agar agar in the house to make quick fruit jello for my vegan friends.

No coconut milk here
Never heard of agar agar- So far my nephew is the only vegan I know and I only found out last night.
Those cookies look good but might not hold out in the heat.

Just for future viewers, most vegans will not eat honey, as it is an animal product. Some will not eat sugar because it is processed with something (I forget what) that is an animal by- product.

Also for future reference, I have successfully made the Pioneer Woman cinnamon rolls (my favorite ever) completely vegan. They were delicious. I just subbed Earth Balance for the butter and almond milk for the dairy milk.

It's very easy to make most baking recipes vegan, especially if the original recipe doesn't contain eggs. But even then there are workarounds.

I tried I had no idea about sugar.........:( have no time now to make another one I looked at the splenda too when I made it but thought no. I even found an icing recipe with avocado I hope he is a vegan that eats sugar.

Most vegans that I know do eat sugar so I wouldn't worry about that too much. I don't know if I would take an avocado icing camping though.

It's very sweet of you to want to include him. :) I am sure he will appreciate the gesture.

I think it's more likely than not that he eats sugar...but I live in Extreme (that's with a capital E) vegan country and some of my friends I've cooked for do not. I learned the hard way about not using honey and sugar :(

It's so extreme here that I've heard local vegans want their own separate co-op building so they don't have to shop in a non-vegan store. I pass no judgement on that; they have their convictions, it's just to give an example of how serious it is in my community.

So I read I could freeze avocado so the cake went into the freezer as long as it lasts the days drive today and is okay for tomorrow when we meet up with them I will be happy. My brother has a fridge if my skookum cooler doesn't work. Time to start packing the food.
