Alexa *********************************************************** Holly Berry Cookies Servings: 12 Ingredients: 2 cups all-purpose flour 1 cup white sugar 1 teaspoon ground cinnamon 3/4 teaspoon baking powder 1/4 teaspoon salt 1/2 cup butter, chilled 1 egg 1/4 cup milk 2/3 cup seedless raspberry jam 2 cups confectioners' sugar 2 tablespoons milk 1/2 teaspoon vanilla extract 1/4 cup cinnamon red hot candies 4 drops green food coloring Directions: 1. In a large bowl combine the flour, white sugar, ground cinnamon, baking powder and salt. Cut in the butter until the mixture resembles coarse crumbs. In a small bowl beat the egg and 1/4 cup of milk. Add this to the crumb mixture until the dough is moistened. Cover and refrigerate for at least 1 hour. 2. Preheat oven to 375 degrees F (190 degrees C). 3. On a lightly floured surface roll out the dough to 1/8 inch thick. Cut with a 2 inch round cookie cutter. Place on ungreased baking sheets. 4. Bake at 375 degrees F (190 degrees C) for 8 to 10 minutes or until edges are lightly browned. Cool on wire racks. Once cool spread jam on half of the cookies then top each with another cookie. 5. To Make Glaze: Combine the confectioners' sugar, 2 tablespoons milk and vanilla until smooth. Spread glaze over the cookie and decorate with red cinnamon candy before the glaze is set. Let dry. Using a small new paintbrush and green food coloring, paint holly leaves on cookies.

Date Nut Bread in P&B can. 1 cup sugar 1 egg 1 tsp butter 2 cups flour 1 cup nuts 1 cup dates chopped 1 tsp soda 1 cup boiling water Add chopped dates to soda water and mix with rest of ingredients. Spray can w/pam. I usually use a little sugar in the bottoms of my cans only because I don't like the white flour that shows on the bread. Bake at 325-350 for 1 hr or until a toothpick inserted in bread comes out clean. I usually double this. Sorry for being so late but have been busy lately. Enjoy!

Lemon chiffon pudding Categories: Desserts Yield: 6 Servings 1 cup Sugar 3 tablespoon Butter 4 tablespoon Flour ¼ teaspoon Salt ¼ cup Lemon juice ½ Lemon grated rind of 1 cup Milk 3 Eggs, separated Servings: 6 DIRECTIONS: Combine sugar, flour, salt and butter. Add lemon juice and rind and beaten egg yolks. Beat until ingredients are thoroughly blended. Add milk and blend into mixture. Fold in stiffly beaten egg whites. I found something called "smartground" that is a crumbled hamburger substitute. They even have one already "taco" flavored. I use that as a ground beef substitute instead of tofu. My husband and kids didn't realize it wasn't regular ground beef (I'm the only one in the house that doesn't eat meat). As far as regular tofu goes, I do like it alot. I usually mix up a marinade of equal parts soy sauce and orange juice, then add fresh minced garlic and freshly grated ginger root, sesame oil, black pepper and sometimes a touch of five spice powder. I let the tofu cubes marinate and then stir fry with whatever veggies I happen to have. I like spicy food, so I usually stir fry a couple hot peppers to flavor the oil to start with, then I continue on with the recipi. I usually put a weight ontop of the block of tofu and let it sit awhile to get some of the water out of it too. I'm the opposite way as far as the texture goes - I've frozen it but I don't like the change in texture. It doesn't "feel" right in my mouth. I prefer it's natural texture.
