Comments (4)Was the bread a yeast bread or a quick bread? There are recipes for Yeasted Banana Bread (including some recipes with dried fruit in them - more like a banana-flavored raisin bread - King Arthur has a Sandwich Banana Bread recipe). There are also recipes for Banana Bread Pudding with Caramel Sauce. Perhaps with a little more searching you can "marry" two recipes to get a copy-cat recipe. I've made bread pudding using an over-baked loaf of banana bread that was too dry. Too bad I wouldn't have thought about adding the caramel sauce..... :-) My go-to recipe: Palm Sugar Caramel Sauce (2 servings) 1/4 c. palm sugar 1 T. half & half 1/2 T. Lyle's Golden Syrup Cook and stir 2-3 minutes in a small pan (or in a small bowl in the microwave for 1-2 minutes) until smooth and caramel color. Add chopped pecans, if desired. Comments (13)OMG!!! I think he is just stunning!! It was 5 years ago and Tyler was appearing at a local Book and the Cook fair in a nearby city. I was a complete mess at the time. My father was very ill in the hospital and on his final days and I was SICK with a nasty flu bug and truth be told I did not want to go but Frank got me the tix so we went....He made some sort of salmon from his cook book and if you bought the book at the show you could meet him so while I was watching the show (barely able to stand mind you) Frank went off and bought the book and stood in line for me so that when the show was over I would get to meet him and he could get me home. I have to say maybe it was the flu or the drugs or something because I am a very social person able to drum up a conversation with a rock and all that would come out of my mouth was "I really like your show". Thats it! I did get a picture where I look like I'd been run over by a bus but we still laugh about it to this day!! I've met a few chefs and never have I had the jitters like I did with Tyler!! Comments (38)It never occurred to me that there were people who had never heard of banana pudding. I'm shocked!!! LOL! I make mine from scratch. About 20 or so years ago someone brought some to a Christmas party at work and it was called Easy Banana Pudding. It was made with French Vanilla instant pudding and called for Eagle Brand milk. It was definitely different from the other pudding, but it was mighty tasty. I have made it a few times, but haven't done so in a long time. I still prefer the original recipe pudding. Here's my recipes: Banana Pudding ¾ c sugar 3Tbsp. all purpose flour dash of salt 4 eggs 2c milk ½ tsp. vanilla extract 5 to 6 ripe bananas, sliced Vanilla Wafers Combine ½ c sugar, flour and salt in top of a double boiler. Mix in 1 whole egg and 3 egg yolks; stir in milk. Cook, uncovered, over boiling water, stirring constantly until thickened. Remove from heat; add vanilla. Spread small amount on bottom of 1½ qt. casserole. Cover with a layer of vanilla wafers. Top with a layer of sliced bananas. Pour about 1/3 of custard over bananas. Continue to layer wafers, bananas and custard to make three layers of each, ending with custard. Beat remaining 3 egg whites til stiff, but not dry. Gradually add remaining ¼c. sugar and beat til mixture forms stiff peaks. Pile on top of pudding covering entire surface. Bake in preheated 425°F oven for 5 minutes or until lightly browned. Serve warm or chilled. ** note** Sometimes I don't put the meringue on; I just crumble a few vanilla wafers to make crumbs and put across the top. **another note** I almost always double the recipe because it doesn't last long either around the house or any pot luck I take it to. Here's the recipe I have that uses sweetened condensed milk: 1 lg. box French Vanilla instant pudding 1 can Eagle Brand milk 1 (9oz) carton Cool Whip 1 box Nabisco vanilla wafers 6 large bananas, sliced Mix pudding according to pkg. directions and let stand for a few minutes to set. Add Eagle Brand milk and Cool Whip. Mix well and pour half of mixture over a layer of vanilla wafers and bananas. Make another layer of vanilla wafers and bananas and pour remaining pudding mixture over this. Crumble wafers on top or top with additional Cool Whip. **note** On this pudding I put both Cool Whip and crumbled vanilla wafers on top. **another note** I don't necessarily use the brands mentioned in the above recipes. Milk (amount according to directions on box) Sugar-free condensed milk *(recipe below) Sugar-free, fat-free Cool Whip 8 oz 4-5 bananas Reduced fat Vanilla Wafers. Mix 2% milk (amount noted on pudding box) and pudding with mixer. Add condensed milk and mix. Next, with a spoon, fold in the Cool Whip until thoroughly mixed. Begin by pouring a small amount of the pudding mixture in the bottom of your dish, and then layer wafers, sliced bananas, and pudding mixture. Be sure to save enough of the pudding mixture to cover the top of the pudding. To top off the pudding you can finely crumble a couple of wafers and sprinkle over the top of the pudding. * SUGAR-FREE CONDENSED MILK 1/2 cup water 1-1/4 cups non-fat dry milk. 1 cup Splenda (I sometimes use the Great Value equivalent). 6-8 Sugar-free caramel candy chews. 6 Sprays of I Can't Believe It's Not Butter. 1 tsp. vanilla flavoring. Heat water in a glass measuring cup, in the microwave, to just the boiling point. In a small dish, melt the caramel candy chews. Stir the caramel into the hot water, stirring until fully dissolved. Add non-fat dry milk and mix. Add Splenda, vanilla flavoring, and "butter" spray. Mix until no lumps. Refrigerate for 4-6 hours. (Once you have made this and it is cold, it should be a good thick consistency---but you can change the consistency the next time by using more or less non-fat dry milk). (This sugar-free condensed milk also makes a good pumpkin pie.) ENJOY....See Morelindac
