Mozzarella di (water) Buffala (lots of pics!)

Hi everyone...so the irony in this post is that Annie had posted about a water buffalo she had seen in a farm near her a couple of weeks ago...this past weekend, we went up to Vermont to do some work in our condo...my fiancis a photojournalist, so he likes to takes pictures of whatever he can, whenever he can. He asked me if there was anything cool on the way up that he could shoot.

I told him about the Woodstock Water Buffalo company (which I had heard about a couple of years ago), in South Woodstock, VT. They make fresh Mozzarella cheese and yogurt from water buffalo...he contacted them and they said we were more than welcome to stop by, so we did!

First, since a lot of us thought the water buffalo are mean and ornery, they aren't. They are extremely friendly and actually crave attention. We got lots of kisses!! The water buffalo in Asia are generally feral, so they aren't as nice, but it's the cape buffalo from Africa I was confusing them with - and they are not very nice at all.

In any event, I had NO idea that all mozzarella di buffala from Italy is made from water buffalo, and that it can't be called that unless it's made from buffalo milk (at least that's what they told us). This company is the first and only farm in the US to raise the buffalo, but they are working with other farms in the US to raise some of their herds, and they have also sold some of their male buffalo to other farms. When I mentioned the post that Annie had made and the one she saw in Michigan, the woman said it was funny, as she was just there two weeks ago and they are starting a program with a farm in Michigan! So perhaps they are connected!

We got to go in to their creamery and watch them make the cheese, and they gave us a container to sample. We also got samples of the yogurt, which was really, really yummy. It's much thicker than regular yogurt, almost a custardy texture. The yogurt is sold in Whole Foods, but the cheese is hard to find. I think they sell it mostly wholesale, though we did find it in a cheese store near our condo. It was very yummy with some heirloom tomatoes and basil. :-)

Anyway, here are some pics...by the way, if anyone is ever in the area, they don't offer formal tours, but you can walk around and check the place out!
