Help me understand hot water baseboard heat

I just purchased my first home without forced-air heat. It has hot water baseboard radiators throughout the home. Having never had a boiler before I don't know what is typical behavior.

When I adjust the thermostat up I can hear the boiler flame turn on. It runs for a few minutes (maybe 10?) and then clicks off before it reaches the set temperature. It will then click on in a few more minutes and turn off a bit later.

Is this typical behavior? Is the water continuing to circulate after the flame turns off? How fast does the water move through the system?

In a forced air system the thermostat commands the fan and the heating element separately. Does a thermostat control the circulator and heating element independently or is it just one control?

I'm looking at doing some renovations to the kitchen including possibly knocking out a wall with a baseboard heater on it. Is there a way to compensate for a reduction in heating surface area (raising water temp, etc.)?
