canning peaches in white wine

Back in the 70s my mother and I were canning peaches and came across a recipe using white wine in the syrup - I can't find a reference to this since (I thought it was Sunset Magazine), but they were wonderful and I'd like to try it again. Anyone used white wine when canning peaches?

Every time I see this thread's title I think, isn't the basis for white sangria?

I hope you get an answer! I couldn't find a recipe either. I did find an old discussion that was somewhat contentious over on the Harvest forum about using a salt bath before canning peaches, but that was it.

The two pH numbers I get for white peaches is 4.39 and 4.5. 4.5 is very marginal for BWB without acidification. If you want to be totally confident, you might treat white peaches like Asian pears and add 1 T. bottled lemon juice per pint. Process like any other peach. (Actually, the flavor of canned white peaches might benefit from a little added acidity.) You might want to try a very small batch. It's not a stupid question. It's a perfectly rational one. Nectarines are actually a peach with a recessive gene that makes them fuzzless. It's principally a difference in commercial labeling, not a difference in species. You can actually have a nectarine bud sport on a peach tree and it's not unusual in an orchard to find both types of fruit. On pH lists nectarines and peaches overlap with nectarines ever so slightly higher in some cases but still well within acid guidelines. You can process them just the same. Carol

That recipe is low in vinegar and it is well diluted with water too. It is basically a 6:1 water to vinegar ratio while the approved recipes call for a 3.5:1 ratio. Might be fine if they were regular peaches. But since they are low acid to begin with and no additional acid added, I wouldn't keep them. JMO Dave

Preppy, Goole, "flowering peaches". There are stone fruit like peaches or apricots that are grown for their beautiful flowers. They do not set fruit. They are strictly for an ornamental purpose. you can also google flowering apricots.

No, but I've canned pears in port for mother, she loved them.

Fruit is acidic and can be canned in just plain water safely, if it suits you. Fruit often gets canned in apple juice or a simple syrup of sguar and water.

I'd make a light syrup, maybe 4 cups of water to a cup of sugar. Mix white wine, I'd probably go for 50/50 syrup and wine, taste and see if you want to bump the wine up. I think a Reisling and some cardamom pods would be nice, or maybe a sweet Moscato with vanilla beans. Or just plain, depending on what you are looking for. And, on second thought, Moscato might be too sweet when mixed with a sugar syrup, even for me.

Good luck, I think it's going to be based on your taste but no matter, it's safe to can to your peaches in white wine so I say go for it!

I had a friend that used to can pears in white wine. I have not talked to her for several years. Hmmmmmm.......maybe I'll see if she is registered on Facebook. If so, I will email her and ask for the recipe.
