canning peaches in white wine

Back in the 70s my mother and I were canning peaches and came across a recipe using white wine in the syrup - I can't find a reference to this since (I thought it was Sunset Magazine), but they were wonderful and I'd like to try it again. Anyone used white wine when canning peaches?

Every time I see this thread's title I think, isn't the basis for white sangria?

I hope you get an answer! I couldn't find a recipe either. I did find an old discussion that was somewhat contentious over on the Harvest forum about using a salt bath before canning peaches, but that was it.

It's not a stupid question. It's a perfectly rational one. Nectarines are actually a peach with a recessive gene that makes them fuzzless. It's principally a difference in commercial labeling, not a difference in species. You can actually have a nectarine bud sport on a peach tree and it's not unusual in an orchard to find both types of fruit. On pH lists nectarines and peaches overlap with nectarines ever so slightly higher in some cases but still well within acid guidelines. You can process them just the same. Carol

That recipe is low in vinegar and it is well diluted with water too. It is basically a 6:1 water to vinegar ratio while the approved recipes call for a 3.5:1 ratio. Might be fine if they were regular peaches. But since they are low acid to begin with and no additional acid added, I wouldn't keep them. JMO Dave

Well, I solved my Abundance problem by taking a big market basket full of the white peaches, pluots and tomatoes to a going-away BBQ for our nephew, where they all disappeared like I'd put out little balls of gold. One of the guys offered GDG a little candy bar, but she said she's rather have another peach. How's that for good training?! I need to go out and wrap the Indian Blood Peaches in bird netting -- if I want any for canning. The Nectarines should be getting ripe any day now. I haven't been out to look yet, but I imagine that the last of the peaches and pluots that ripened while we were gone have been eaten by the critters. Thank you for the links, terri, but they are pretty much the same ones I pulled up when I first started out, and none seem to be for white peaches. (But then I could have missed one since my eyes glazed-over reading all the threads.)

It won't clear until it has finished fermenting. If you did add pectic enzyme, even if it doesn't clear, you can just add a clearing agent, like chitosan, when it has finished, before bottling. If you omitted the pectic enzyme, you will have to put it in and let it work before it will clear. It might take awhile.

No, but I've canned pears in port for mother, she loved them.

Fruit is acidic and can be canned in just plain water safely, if it suits you. Fruit often gets canned in apple juice or a simple syrup of sguar and water.

I'd make a light syrup, maybe 4 cups of water to a cup of sugar. Mix white wine, I'd probably go for 50/50 syrup and wine, taste and see if you want to bump the wine up. I think a Reisling and some cardamom pods would be nice, or maybe a sweet Moscato with vanilla beans. Or just plain, depending on what you are looking for. And, on second thought, Moscato might be too sweet when mixed with a sugar syrup, even for me.

Good luck, I think it's going to be based on your taste but no matter, it's safe to can to your peaches in white wine so I say go for it!

I had a friend that used to can pears in white wine. I have not talked to her for several years. Hmmmmmm.......maybe I'll see if she is registered on Facebook. If so, I will email her and ask for the recipe.
