Comments (18)I pack my girls 1/2 a sandwich most days. PBJ, turkey/cheese, tuna salad, chicken salad, egg salad. Into the sandwich-sized Tupperware container, I put the 1/2 sandwich and some type of "treat" such as pretzels (Deirdre's favorite), wheat thins, Fritos (Delaney's favorite), gold fish, etc. On top of that I may add a dried pinapple slice in a soft Baggie or a Hershey kiss or a piece of Halloween candy. Maybe yogurt-covered raisins or golden raisins. Close the Tupperware container. Then comes fruit or veggie - apple sauce, mandarin oranges, jello with fruit, baby carrots, or grape tomatoes. Last comes organic milk (which the school doesn't sell and the milk line takes to much time for my slow eater anyway). On occasion, I put in calcium-fortified OJ box. Sometimes, I throw in a yogurt. Throw in a napkin and an ice pack. That's it 80% of the time. Other days, I pack soup or pasta or other leftovers in a thermos you just take the lid off. I run very hot water in the thermos while nuking the soup/pasta, then fill it almost all the way up so there's not much air and the contents stay hot. Be careful now tight you screw the lid on!!! The first day I sent soup in Delaney's cute Scooby Do thermos, all the lunch ladies tried to open it and they had to call the janitor over to get the lid off. Apparently, it was on so tight it created a vacuum! (And who knows where the janitor's hands were before the lunchroom???) We've also done cheese-and-crackers and celery-peanut-butter in place of the 1/2 sandwich. They love turkey pepperoni, too. They may get a hard-boiled egg. I saw some kids with cold pizza and thought that was a brilliant idea. I let them buy lunch one day a week to have the experience of making their own selections and paying for their purchase. Comments (15)I packed a lunch for years and found pasta casseroles very convenient, like ratatoule with sauteed onions, hamburger,spices, tomato sauce or your favorite pasta sauce and shredded cheddar cheese. I froze individual servings, took a plate or keep one at work (but may be inconvenient to wash there) to heat in the microwave. I used pint plastic containers had had cottage cheese or wwhatever and tossed them if they looked messy and thast didn't cost me anything. I also liked to make a pot of beef veg soup or Albondigas (meatball soup). Recipe below. Very easy, very quick,very good. I never measured anything, make your own variations. Albondigas 1-2# lean or reg. hamburger 1 egg 1-2 Tbs raw rice 1-2 Tbs finely chopped onion salt/pepper Boil about 1 qt water in small soup pot. Mix in bowl with hands until well blended. Form small meatballs about the size of walnuts (I like them smaller) and carefully drop into water. When done, I add diced celery, small diced potato, chopped tomato (optional), sliced carrots. When boiling, skim foam with slotted spoon. Simmer for about half hour until vegs are tender. Taste for salt Serve with hot tortillas or french bread. Comments (12)I told DF my plan, and got "the look", which means his mom will probably get offended yet again...whatever. But things change from day to day with her - I'm going to go ahead and just plan a nice meal anyways, and if we need it, great, if not, I'll use the menu for another time. LOL Anita - I *want* to pay to take everyone to lunch ourselves, but my FMIL has a serious problem with the bride & groom paying for lunch on thier wedding day, which is why *she* wants to pay for it (but won't do it in a discrete way, which is why we refused). See the problem here? I can't have each mom make something, because then if one's dish was "more gone" than the other, they would be whining behind our backs (to us, individually) that everyone liked the *other* dish better. I know, it's pathetic, but true. That's why we can't grill either - both dad's grill, and both think they have the "perfect touch", and neither think that *we* should grill ourselves...aye karumba...what a mess. LOL Tally Sue, thank you!! I don't think I'll borrow the cookie cutters, but that is a wonderful idea! I'm going to keep your salad recipes too, because they sound great (esp. the pasta one). That would work with the baked chicken quite nicely (my sis will help, but she can't really cook, so nothing too fancy). Joann's fruit bowl would go nicely with all of those, I think...I'll have to check out that brunch menu. So many options!! Anita, that salmon dish sounds *phenomenal*, but unfortunately, it's hard to find good fish here (we're kind of land-locked). But I'm definately going to look into that... Comments (18)My daughter puts a can of soup in around 9 a.m. and says it's piping hot at noon. I think you would need to experiment. There's no reason why the crock pot couldn't stay connected to DC current while he is driving from place to place as long as it didn't run down his battery and was situated so that it didn't spill....See Morelpinkmountain
