Help! original (not old) Annie, Your Molasses Cookies

Annie, I've mixed up your Molasses Cookie recipe and something has come up and I probably can't finish until tomorrow. Will it make a difference if I chill overnight?

Oh heck no, it'll be fine. In fact, I have some in the freezer right now, I often freeze part of the dough to bake later, so I don't have quite so many to lead me astray!

My next experiment will be this week. I'm going to make a batch with brown sugar Splenda and replace some of the white flour with whole wheat. Elery's stepmom is diabetic and has been in and out of the hospital for the past several months with heart issues. I want to take her a treat, but I want it to be better for her, something that will fit into her food plan. So, we'll see. I have regular whole wheat and whole wheat pastry flour, so it should be interesting.

Oh good! Thanks Annie and keep us posted about your experiment.

This dough is so good I just had to eat some raw. I don't know how I can wait until it's cooked!

These are really good if you want something chocolate. Mocha Truffle Cookies 1/2 cup butter 1/2 cup semisweet chocolate pieces 1 tablespoon instant coffee crystals 3/4 cup sugar 3/4 cup packed brown sugar 2 beaten eggs 2 teaspoons vanilla 2 cups all-purpose flour 1/3 cup unsweetened cocoa powder 1/2 teaspoon baking powder 1/4 teaspoon salt 1 cup semisweet chocolate pieces In a large saucepan melt butter and the 1/2 cup chocolate pieces over low heat. Remove from heat. Stir in coffee crystals; cool 5 minutes. Stir in sugars, eggs, and vanilla. In a medium mixing bowl combine flour, cocoa powder, baking powder, and salt. Stir into coffee mixture. Stir in the 1 cup chocolate pieces. Drop dough by rounded tablespoons onto lightly greased cookie sheets. Bake in a 350 degree F oven 10 minutes. Let cool 1 minute before removing from sheet. Makes 30 cookies.

LOL, Bragu, thanks for the numbers. (grin) FOAS, I don't make them nearly as often as I used to, and the batch makes so many that I just freeze balls of dough on sheet pans then dump them into ziplock bags and keep them in the freezer. I was out, but I'm not any more, and now I have some for next week when Mother comes to stay for a few days. Plus my stepdaughter's husband says they are the best cookie he's ever had and they are coming to visit around Thanksgiving, so I can have some in the freezer all ready to bake.. Cloud Swift, I hope you heal up quickly and completely. Cookies are good medicine, be sure to eat lots! edie, I know that molasses cookies are kind of "old fashioned", but I still like them the best. LindaC, she seemed to be able to handle cookies with both hands and mentioned that she could use some help with an upcoming bake sale. She's definitely not able to bake anything. No good deed goes unpunished... Chloebud, I have to get my baking fix somehow, plus practice for Christmas! Sheilajoyce, My nickname wasn't nearly that nice, LOL, but I do like cookies. My mother (with a family of 7, plus friends, grandparents, aunt...) used to bake scads of cookies for Christmas. We were spoiled for choice! Almond crescents, pecan balls, mini pecan tarts, date pinwheels, hermits, jam thumbprints, cut out sugar (with a touch of nutmeg), a cream cheese pastry dough filled with various fruits or nuts (can't remember the name). Sometimes she would make fudge. I am sure that I've forgotten a couple. Over the years I've made all of these, usually just 2 or 3 in small quantity (almost always including hermits) but as the DD grew up and I became prone to gaining too much weight in November and December, I am down to making just one small batch. This year it is gingerbread.

I do what Annie said. My grandma's molasses cookie recipe is my favorite, very molasses forward, but it calls for shortening. I don't like hydrogenated fats in general, but to get the right consistency that I loved in grandma's cookies, I compromise and use half butter and half stick shortening/margarine. I've tried the more "natural" shortenings but I don't really see a big advantage to them. The shortening is a texture thing, not a taste thing. I have the same experience with oatmeal and chocolate chip cookies, for the consistency. You can also use 2/3 butter and 1/3 shortening, that's the minimum level that works.

Yummy-yum-yum. I must only cook two pans of these cookies because I would eat far too many if I made them all right now. So delicious and for me, the more crystalized ginger, the better. Thanks for a wonderful recipe Annie!

Beverly, the ginger really makes it for me in those cookies too. Sometimes the old recipes are still the best.

AB, I find it amazing that, at your age, you're still able to remember stuff.
But, it has been said that ginger improves memory loss.

Kidding, AB. I'm just a little anxious about the upcoming trip. That, and I'm out of Cocoa Puffs.

Hubby-dubby and I have been 600 miles away cleaning, painting, washing and clearing out the family home. The first thing I did after coming home, after retrieving our pup from the kennel and emptying out the truck, was to grab one of those cookies from our freezer! The ones I made into sandwiches with lemon sorbet were calling to me and I was there for them as well, padding out into the freezer while hubby dubby was asleep -- feet up and snoring!! His loss!
