dried mushroom too old?

I found a package of sliced dried shiitake mushrooms in my freezer with date of 2006. Had it in the cellophane packaging inside a Ziplock bag. Is it ok to use? Will be cooking it in a Chinese dish.

I think the only way you can tell is to soak some in some hot water and see how they taste/smell. I store dried mushrooms at room temperature, but then I go through them fairly quickly. I think the worst that happens to dried mushrooms is that they lose flavor with age, which is why they have a date.

I've only had one package of dried mushrooms that I did not like, and I don't think it was because they had gone bad - I just did not like that particular type of mushroom - or maybe it was how it had been dried.

Shiitake mushrooms dry very well. You don't even need to freeze them, if they are very dry.

What kind of tree? If it's a fruit tree then keep the soil on the lean side. This will encourage fruit set instead of tree growth. If it's an ornamental tree then by all means mix leaf mold with soil and compost to encourage growth. Instead of staking the tree, try an old Norwegian trick. Put heavy rocks on top of the root ball to prevent it from moving. This will allow the fine roots that go from the root ball into the new soil from breaking as the stem moves back and forth in the wind. This allows the stem to grow strong with wind movement. The rocks also work as mulch. In Norway, rocks are plentiful and cheap.

Well, it partially depends on what species of Passiflora it is, but for the most part Passiflora can be heavily trimmed, but not all the way to the ground. I agree with kayjones above that you should wait until you see new growth. I had an 11 year old P. caerulea that I had to cut back very hard due to it being strangled in a chain link fence, (yes, the branches are that big), and it actually did better the next year than it had in several previous. I think the most important thing is to make sure you do it at the right time of year, when new growth is beginning to break through. Don't wait till it gets too hot, and don't do it when there is still chance of freeze. There's my $.02... Eric

Grout Dried too dark

Update: I did another small test area without misting the substrate. The grout dried seriously darker than what was left in the bucket or what it is in the surrounding tile. I also called Custom Building Products, the grout manufacturer and a technical support person reviewed my photos and guesses that there is something in the subsurface (thinset of mudpack under the floor tile), such as old soap scum or body oil, that could be leaching into the grout. However, he is not sure. He also said that grout stains are available, but they are not good for shower floors. Anyone have any ideas or experience with this type of problem?

That sounds like a great place, and very nice people, Beachlily. I bet they'd love to hear from you. There's a couple of videos out there (at least) showing some techniques to making risotto. One is by Mario Batali, (http://www.nytimes.com/2007/05/02/dining/02mini.html?_r=1) and he's making asparagus risotto. He doesn't actually stir all that much. The other is Tom Colicceo, making roasted tomato risotto. I made that the other night, and it was quite good. In this video he shows his way of telling when the risotto is done. The only change I made to his recipe was to use vegetable broth. I'll put a link to that video below, but I don't know how to do more than one link, so I just included the address for the Batali video above. ) (By the way, I stumbled across that website when I did a search for tomato risotto [I have an abundance of tomatoes right now]. I think if they were both dried and frozen they'll be perfectly safe to eat, and if they were packaged well, the quality is probably fine too. Dehydrated food is meant to last for a long time.

As Lars mentioned, rehydrate them and see how they are, but I wouldn't hesitate to use them.

Easy ways to make dried mushrooms more tasty

1. Rehydrate them in stock or some liquid more flavourful than plain water - e.g. cooking wine, dark beer, miso, or even add soy sauce to water.

2. Don't rehydrate them all the way - remove from liquid before the mushroom is all liquid-swelled and spongy-like.

3. When cooking, use enough heat and oil to brown the mushrooms, this takes longer if the mushrooms are very wet, hence #2

You can get the most flavor out from drier mushrooms.

Use a blender to make mushroom powder.

Dried shiitake mushrooms don't need to be frozen. I think if anything, the freezer might impart flavours to the mushrooms that are undesirable. I agree with rehydrating one and trying it before putting more in a recipe.
