Do a separate gas wall oven and put a separate MW built in elsewhere. MW electronics don't like the heat that a gas oven will create. Even if you have the electric to do a combo, don't. Separate units always perform better, and are much easier to replace than having half of it just be a giant storage compartment for pan lids when it dies.

The all gas Woff pumped out hot steam at the rear vent which covered the backsplash with lots of water vapor When you burn gas, the result is CO2 and H20 ... and heat. All gas ovens will vent steam when the flame is on.

Rockpig, Based on your response, from a pure cooking performance perspective I would go with gas since it sounds like you cooking meats and vegetables and they benefit from the moist heat of a gas oven. This of course assumes that you either have the appropriate utility in place or will be making provisions to add it if not. Convection will be an adjustment if you have not used it before, nothing earth shaking, just different. I like my cooking to be a little more primitive and do my oven cooking in a brick oven (see link below). My 60" Bluestar rangetop fights for equal time with my 72" stone cooking hearth. None of the above are very high tech and some require skill and patience to get a desirable result - that patience and skill is sumptuously rewarded. Cookies be damned, if cooking doesn't figure high on your list of ways to spend a day I would stick with electric because that is what most people are familiar with and many home recipes are written in mind with, also, the self clean is set and forget. This is not to say that gas is difficult but I'd say it's one of those things that unless you love cooking and cooking certain things, it probably doesn't matter and you probably won't care enough to make learning and living with the differences worth it to you. The purists view of the kitchen is different from the utilitarian or cosmetic view. The choices are all about who you are as a cook. Some people wonder why I would split wood, nurse a fire and labor in front of a hot stone hearth for hours, spinning a chicken on twine and pulling charred onions from the embers when I could cook the food on a glass top with an electric oven with the all wipe clean, self clean convenience of the modern age. The answer is I have more patience for tinkering and physical discomfort than many but I am commensurately rewarded for the effort in the quality and character of the food. A gas oven will get you closer to that primitive, visceral, organic lure and theater of the flame but still falls short of the brick oven or the hearth. Get what's right for you in your situation but do be open to the magic that can be had if you are so inclined as to put forth the effort. If you do go gas I would highly consider Bluestar - amazing broiler, great oven and none of the clap-trap gadgetry that pervades and diminishes most appliances on the market today. caliloo - Do you have Craigslist in your area? When we first started the remodel I got a JennAir Dual Fuel Slide-In Range (JDS8860BDP). I hated it so I sold it for a lot less then I paid for it on Craigslist. It was only a few months old but I didn't like the different BTU burners. I wanted them all the same like on the Wolf. And talk about being a rocket scientist, you had to be to use the control panel. It had so many features that I would never use. All I wanted was a simple bake, broil and convection like I have now. I don't need nor want all those other features. And I had heard bad things, after I got it, about how the computer in the control panel keeps failing and has to be replaced several times costing hundreds of dollars. Maybe they fixed that. Plus ours was built crooked and the door didn't hang right. We didn't notice till it was being installed. It was a disaster. The cabinets had to be removed and reinstalled and extra trim pieces added. And it stuck out into the room 7 inches because of the curved front. Like I said, I hated it! So do your research and read everything you can about all the ranges out there.
