I prefer white. When I cook and serve hominy, I take a breakfast sausage link, cut it up, and add pepper and heat.
My favorite cafeteria knows what I want as soon as I walk in the door and have my spinach, hominy served up as I hit the line and already have my number out to put on table when my snapper fingers are freshly cooked and ready to be brought to the table :o)
Not a hominy fan! Didn't care for it as a child. Have tried it as an adult, and I still prefer to avoid it, no matter how "wonderfully" it is prepared.
I once had a casserole of hominy (white, I think), cheese sauce, onions and diced green chiles baked until bubbly. It was delicious. I also like it fried in bacon grease and then topped with lots of black pepper and hot banana chiles on the side.
Are you talking about that white stuff that looks like small diced potatoes that is soaked in lye? If you are, count me OUT. I've never seen yellow, though. What my mom fixed was out of a can and maybe she didn't know how to make it palatable. I get the shivers just thinking about it. I think mother just warmed it up and put butter on it.
Those of you who like it, please tell me how you cook it.

Hominy casserole 2 (15 1/2-ounce) cans yellow or white hominy, drained 1 (4-ounce) can green chilies 1/2 cup grated onion 1 (8-ounce) carton low-fat sour cream 1 1/2 cups grated sharp Cheddar cheese 6 strips bacon, cooked and crumbled (optional) 1 1/2 teaspoons salt 3/4 teaspoon pepper Instructions 1.Preheat oven to 350F. 2.Combine all ingredients, except cheese, and spoon into a lightly greased 8-inch square casserole dish. 3.Sprinkle cheese evenly over the top. Cover with foil and bake 20 minutes. 4.Remove foil and bake an additional 10 minutes, until golden and bubbly. Tips From Our Test Kitchen: This hearty dish can be made lower in fat by using half the suggested amount of cheese, using non-fat sour cream and eliminating the bacon.
I forgot all about it, I leaned to love it when living in S Carolina I used to take a can of white hominy drain it and then saute it in a pan with a jar of dried beef yum have to put it on my shopping list.
I;ve never eaten it fried with peppers but that sounds so good to me.....I already weight 400 lbs so I'll pass on Glendas casserole but I like it plain, white or yellow, with cornbread and greens......
