Bumblebeez, San posted a recipe for chicken that called for frozen lemonade, I have it at home and I'll try to remember and post it tonight, unless someone else here has it.

One of my secretaries made this for the last office potluck, and it was fast and really sweet.

FROZEN LEMONADE PIE

1 (14 oz.) can sweetened condensed milk
1 (6 oz.) can frozen lemonade concentrate, thawed & undiluted
1 (8 oz.) frozen whipped topping, thawed
2 (9 inch) prepared graham cracker crust or 1 lg. crust

Fold sweetened condensed milk and lemonade into whipped topping. Spoon into crusts. Freeze until firm. Can garnish with fresh lemon slices and fresh mint.

I'm also told that if you thaw it and mix it with powdered sugar it makes a very "lemony" glaze for pound cake or muffins.

Crock Pot Lemon Chicken

3# chicken pieces, dredged in seasoned flour (we like chicken thighs and I add a pinch of 5-spice powder to the flour, along with a little salt & pepper)
brown the chicken in a skillet (I usually skip that)

mix together in a crock pot:
6 oz can of lemonade (undiluted)
1 tsp balsamic vinegar
3 T brown sugar
3 T catsup

add the chicken and cook on high for 3 to 4 hours

We made margaritas last night with lemonade concentrate! Not traditional, but quite tasty.

Save the lemonade until December....it'll keep just fine.
or donate it to a summer school, summer Bible school or make up a couple of pitchers and take it to a playground.
but it will keep just fine in the freezer.

Vitamin C neutralizes chlorine/chloramine.
Would think a teaspoon in a glass of water would be nice.
I drink a lot of water, I know its way better than the chloramine taste with a spash of lemon juice in it.

Mix with white wine for a white sangria.

the pie next Sunday and the unfortunately we are pretty much beer and wine people that don't entertain people who drink alcohol but they are good ideas and I appreciate your posts.

If I saved the lemonade until December, what could I mix it with so it doesn't taste like lemonade? I like to do punch that looks red- usually cranberry juice, 7-up, and pineapple juice.

Thanks for finding that, FOAS. San really liked it but I still haven't made it. Whenever I think of it, I don't have lemonade.

BB, the girls really like strawberry lemonade, I just puree fresh strawberries and stir them into the lemonade, making a nice pink drink. Add 7-up or Gingerale and it's sparkly, and if you're all fancy, you can garnish the glass rim with a whole strawberry.

That sounds good. I would think frozen strawberries would work? It will be December after all.
I am so stuck in the cranberry pineapple mode- which I've done for years- I need help thinking outside my little box.

BB, frozen strawberries will certainly work, and it make a pretty colored drink too. I try to convince myself that the berries make up for all the sugar in the lemonade, LOL, and that lemons have Vitamin C.

Oh, and if you don't like the little seeds in the berries you can strain them, but it's a PIA, not very effective and I don't bother.

Please don't burst my bubble and tell me otherwise. (grin)

Oh, the calories wouldn't bother me at all if I really liked it. I never think about calories in relation to cheese and wine!

When you open the can all the calories fall out?

Few drinks better then lemonaide and gin. It has to be tweaked to get the right amount of sugar.

Lyra, I never thought of that, maybe the calories thaw and fall out when you thaw the lemonade? Yeah.....

I wasn't worried about the calories, I'm just always trying to get extra vitamins into the girls and now the grandkids, so I convinced myself that it's fruit, really. (grin)

No gin on hand, maybe vodka? Hey, vodka's made of potatoes or grain or something healthy, it must be very nearly a health food!

In Israel I had lemonade that had mint blended in. It was very refreshing. I wish I knew the right proportion of mint to lemonade. From the green-ness and texture, I'm pretty sure that they blended mint leaves in rather than just infusing it.

I have made San's lemon crockpot chicken more than once and we like it and serve it with rice.

I also like Lyra's idea :) My Grandpa used to drink Gin with Fresca in the summer, but I bet he would have like lemonade and so would I.

I think you could quite nicely use it to make sweet and sour. Chicken or shrimp or your choice of meat. It's already sweet and sour both. Smiles. Make the sauce using your lemonade, add some tomato paste [about 2 tablespoons for a can] and garlic and cook for a few minutes to incorporate. Taste, add salt, probably some soy sauce and if it's too sweet add some vinegar or your choice. If it's too strong add some chicken stock or water to thin/mellow. Remember that the sauce will mellow and change as you add the meat and veggies.

From here you can do it two ways. Just add the veggies and meat to the sauce or stir fry the veggies and meat and then add the sauce to that.

The easy way...Add large chunks of pepper, onions, pineapple and the chicken cut into cubes [if using chicken or pork]into the pot with the sauce. If using shrimp wait until the veggies cook a bit then add them. Check for seasoning and thicken with a bit of cornstarch slurry if needed.

Stir fry way. Just stir fry the chicken and veggies together. Add the sauce to coat with some extra. Cook together until everything is done to your likes.

Serve either over rice.

Note: You can also add some or all of the pineapple juice to the sauce. You'll probably need more vinegar if you do. This might make more sauce than you need so you can make up the sauce and take some of it out and freeze it for another time before adding the veggies and meat. Don't bother to thicken the sauce until you use it later. This sauce can be used as a marinade for meat on the grill and also to baste meats on the grill.

Here is a link to a google search..I can't remember the version we made other than lemonade, vodka, beer and sprite...not sure on the measurements not that it would matter all that much. lolololol!

Fill a blender with ice, slop in some of the frozen lemonade concentrate and then slosh in a good bit of Citron vodka with a splash of lemoncello! Give it a few whirls in the blender to crush the ice and voila! Lemon Slush! Damn good in the summer!

You can use Midori or any other fruity liquer in place of the lemoncello as well if you want to add a different taste!

Oh my.....David....where I come from we call that drink "Strip and go naked"...LOL!
B ut the recipe was...one can of lemonade, then fill the can with booze ( vodka, gin or blended whiskey or perhaps rum) refill the can with beer and once again with sprite or in the olden days we used Fresca.
Mix gently and pour over ice....

Omg...lol.. poor Bumblebeez, she said they are beer and wine people and they don't entertain people who drink alcohol. I think everyone skipped that part while they were sampling their drink suggestions. Seriously this thread has been cracking me up for just that reason. At least the naked drink has beer in it. LOL.. ... easily amused.

I also noticed that BB doesn't really drink other than beer or wine, but I just figured that since Lyra was bringing the gin, we were having a party and BB was bringing the mixer. (grin)

Heck, I gots some fine apple wine that would probably make a fair mixer with lemonade. Can't say I actually tried that one... hmmm... maybe Sunday. I'm out of beer at home so unless I make a shopping trip something will have to be thought of.

Boy, I'm away from my computer for a little while and miss all the banter. But I will enjoy my lemonade in whatever non alcoholic form it is! The sweet and sour sauce sounds good.
Actually the only alcoholic drink I do like is wine. Dh likes beer (I like beer bread) but I do use other spirits in cooking.

Oh, Bumblebeez! Vodka has no taste! Mix it up with some of that lemonade and tell us how you like it :)

LOL Lindac, guess the naked thing is the common thing! I remember Fresca and Tab from the olden days....Mom had it the back of the frige. I'm guessing the Fresca was for a cocktail. We were allowed one coke a week back in the olden days....that and popcorn. In the living room of all places...a real treat for sure! I'm thinking this will be the cocktail for the 4th this year.

BB, I have had and have made Nancy's pie crust with the vodka. Had the pleasure of seeing her do it first hand a couple of years ago. I'm not a huge fan of wine so we can trade...I'll take your vodka and give you my wine...unless it's that ice wine from Canada that Sharon (Chase) turned me onto. I'd fight ya for that bottle! LOL! Like Woodie mentioned, some of us like to party now and then : ) It's all good and I love when a post goes off topic and all over the place....now I want pie and a drink! Popcorn too!
