I don't see a recipe for potato salad....and can't tell you what will happen until I see the recipe.
But...it seems to me that if you want to make soMEthing and serve it cold instead of warm and leave out a major ingredient, you should be looking for another recipe.
What sort of thing do you want to make?

Just off the top of my head, I'd pass on that one. I don't think the butter nor the melted cheese will do very well when they're chilled.Clumps of cold melted cheese won't be very appetizing.
I'm sure there's another recipe here that will work better when served cold. I'm not a potato salad expert, so I leave it to those here who are.
But just a thought, I had some small red potatoes to use up earlier this week. I quartered them, steamed 'em and dumped some pesto sauce on them (bought at Costco last week). DH loved it cold!

Some of the people just don't like mayo, I am just trying to be considerate of that. Someone else is making a mayo based potatoe salad so I am just my a small amount for the others. Serving it warm is not a problem, I was just asking if it could be served cold and/or warm. Did some searching for sour cream based potatoe salads. Would this work? 1/4 C buttermilk, 1 C sour cream mixed with 1-2 Tbs. Dijon mustard. Of course mixed with other ingredients with the potatoes. Thanks.

We tried the Barefoot Contessa's potato salad yesterday and the recipe does say serve warm or at room temperature. The dressing is olive oil based and it was very good.

I'm no expert when it comes to dairy products, but I like the idea of mustard and something tart like butter milk. However this doesn't sound like a "salad", it sounds like a hot and creamy potato dish. Why not go in the direction of a German potato salad with mustard, bacon and oil?

That recipe isn't potato salad...it's scalloped potatoes with a bit of spice added.
Try a vinaigrette derssing on your potato salad.
cut up 2 pounds of red skinned potatoes into dice and cook until tender but not mushy, drain, salt lightly add 1/4 cup chopped green onions and 1/4 cup chopped red pepper, 1/4 cup choppes gherkins and dress with the following:
Dressing
1 T. dijon mustard
1 t honey
1 clove garlic crushed
1 tsp dried oregano
1/3 cup rice vinegar....or cider vinegar
And whisk in 1/2 cup olive oil...
Add pepper to taste.
Serve cold or at room temperature.

That definitely isn't a potato salad recipe so I don't think it would work cold at all.

If I were in your position I would try the one pfmastin shows a link for, except my personal preference would be to omit the boiled eggs and use a good deal of lemon zest to perk up the taste.
