Favorite hot/smoky chipotle sauce

About a month ago I bought a bottle of Dan's Prime Smoky Chipotle Sauce at Gelson's, and it immediately became my favorite hot sauce. Then when I went back to Gelson's to stock up, it had been discontinued and no one even remembered it. So I looked on line and could only find a Canadian source for single bottles, although I found a couple of wholesalers who sell cases of 12 bottles. I tried to order a case from one of the wholesalers but could not get their shopping cart to work - one required a resale number and the other tried to complete my order before I was finished shopping. I guess I am just going to have to buy chipotle peppers and make my own sauce, but this one was very handy to buy. The first ingredient is chipotle peppers, and they use naturally fermented cane sugar vinegar. I was very impressed with the ingredients. I tend to like hot sauces that remind me of what I had in Texas, I guess because that is what I'm used to, and they are not sweet like a lot of other sauces.

I recommend that any Canadians who like Tex-Mex food to order a bottle from the site I linked to above. The sauce has a fantastic authentic and fresh tasting flavor. You have to like smoky chipotles, however.

I've bought several other brands of chipotle sauce, and they do not come close to Dan's Prime. Has anyone else tried it? I might try again to buy a case, as I could go through 12 bottles in one year pretty easily. And why is it easier to buy in Canada?

I'm not familiar with it, but I recently tried Cholula Chipotle and liked it! Just bought some tonight at Gelson's!

Ellen, I also bought the Cholulua Chipotle at Gelson's, and it pales in comparison to Dan's Prime. I'm planning to order a whole case of Dan's Prime, if I can get the web site to work, and I'll save a bottle for you for when I see you next.

I make a lot of refrigerator salsas, and use little vinegar, mostly Goya Bitter Orange juice, like is used in the Oaxacan habanero salsas. This is my current favorite. 2-cups dried Numex Suave Orange habaneros 5-dried Ghost peppers 1-small onion, sliced thin 2-medium carrots, sliced thin 6-cloves garlic, smashed 1-teaspoon white pepper 1-tablespoon table salt 1-1/2 cups Goya Bitter Orange juice. 1-cup water, maybe more Put liquids in blender, add salt and white pepper, and all dried chilies. Process until smooth. Do this first so they can start reconstituting. Preheat oven to 425 and place rack in next to highest position. In a large bowl, toss chopped onion, carrots, and garlic in a little olive oil. Spread parchment paper on a baking sheet, and spread veggies evenly over it, place in oven, and roast for 20-25 minutes or until some charring takes place on the onions. Remove, and let cool for five minutes. Pick up parchment paper, and funnel veggies into blender and process until smooth. You may have to add more water if it gets too thick Taste for seasoning, and store in fridge. This lasts me about a week or so. "...the chipoltes I am used to our red while most jalanenos I find are green." That's right. Chipotles are made from ripe jalapenos, which I seldom if ever see sold fresh. Just the green ones are sold fresh. So far as I know, this is true of all chiles. Dried ones are ripe. Fresh ones are green. Anchos for example, which are ripe and dried, are the same chile as poblanos, which are fresh and green. I smoked and dried ripe jalapenos once when I had a bumper crop. I believe that originally the smoke was just a byproduct of drying them over heat. Mine did not get thoroughly dry after what I considered was a sufficient time for smoking. I had to dry them further in a very low oven with the door ajar. I didn't have a dehydrator at the time. I think the idea is to dry and smoke the chles without cooking them. I don't remember if I split them open before starting the process. I would do that next time. Jim

Found it at the Tabasco Kemah Store back in 2002. Tasted all their available hot sauces (regular, garlic, habenero, chipotle) and find chipotle has less vinegar in it. Smoky flavor from the chipotles as well. It's a staple in our house, as are Tapatio and Valencia. There's also a spicy soy, spicy sweet and sour (lots of HFCS) and spicy teriyaki. Spicy soy is great!

I use the recipe linked below for homemade enchilada sauce. It makes a really good sauce and you can easily regulate the heat by how much chili powder you use. My younger son doesn't like hot stuff and I put in a small amount of chili powder and he loves it. I have done different knids of enchiladas - chicken, beef, veggie - all using this sauce. I agree that the best thing you could have done was to throw out the sauce. It was WAY not worth going to more effort and expense to try to save it. Hmm the only chipotle peppers in adobe or chipotle sauce I see here at all is the little blue San Marcos can. I've never seen or heard of the one you provided in your link.

I had found Bricktown in OKC, and that was the site that completed my order before I had authorized payment. They even sent me a receipt but never charged my paypal account. The price is good at $29.25 for a case of 12, if I could get their web site to work properly.

Chipotles in adobo have ingredients that I do not want in my hot sauce, and so I may have to grill some ripe jalapenos in order to make my own chipotles or else try to find them in a Latin market. There is a Cuban market on Venice Blvd that should have them - at least that's where I bought them before. The dried ones aren't always that good, and so I mixed pasilla and ancho chilies with them when I made chipotle chili sauce before.

Lars, have you tried Tobasco Smoked Chipotle? It's light on the vinegar and has nice heat and smoke. I've not heard of Dan's but I'll look for it. I probably won't find it because we live in TN and don't get good stuff all the time.

Dees, I have tried Tabasco Chipotle sauce, and it did not have nearly the flavor of Dan's Prime. By the way, Dan's Prime is not particularly hot - it just has an intense smoked chili flavor. The chili flavor is particularly appreciated in Texas, where it is considered a sacrilege to dilute it with tomato. I also much prefer chili sauce without tomato, but I will occasionally add tomato, depending on the dish. However, the pure chili flavor always reminds me of Texas and Mexico. And I've been to Tabasco a few times.

Jane, thanks for the offer, but I would not want you to have to send something back across the border!! I haven't given up yet, and I am also prepared to take on the OKC web site and order a case of 12, since their price was so reasonable. I just won't log in to Paypal first, which I think is what caused my problem with their site. I'll register with them first and then see what happens. I just wish Gelson's was still carrying it.

I do highly recommend buying some for yourself from the Canadian source if you like chipotle.
