Favorite hot/smoky chipotle sauce

About a month ago I bought a bottle of Dan's Prime Smoky Chipotle Sauce at Gelson's, and it immediately became my favorite hot sauce. Then when I went back to Gelson's to stock up, it had been discontinued and no one even remembered it. So I looked on line and could only find a Canadian source for single bottles, although I found a couple of wholesalers who sell cases of 12 bottles. I tried to order a case from one of the wholesalers but could not get their shopping cart to work - one required a resale number and the other tried to complete my order before I was finished shopping. I guess I am just going to have to buy chipotle peppers and make my own sauce, but this one was very handy to buy. The first ingredient is chipotle peppers, and they use naturally fermented cane sugar vinegar. I was very impressed with the ingredients. I tend to like hot sauces that remind me of what I had in Texas, I guess because that is what I'm used to, and they are not sweet like a lot of other sauces.

I recommend that any Canadians who like Tex-Mex food to order a bottle from the site I linked to above. The sauce has a fantastic authentic and fresh tasting flavor. You have to like smoky chipotles, however.

I've bought several other brands of chipotle sauce, and they do not come close to Dan's Prime. Has anyone else tried it? I might try again to buy a case, as I could go through 12 bottles in one year pretty easily. And why is it easier to buy in Canada?

I'm not familiar with it, but I recently tried Cholula Chipotle and liked it! Just bought some tonight at Gelson's!

Ellen, I also bought the Cholulua Chipotle at Gelson's, and it pales in comparison to Dan's Prime. I'm planning to order a whole case of Dan's Prime, if I can get the web site to work, and I'll save a bottle for you for when I see you next.

Favorite commercial sauce is a tie between Chipotle Tobasco and El Yucateco green. But home made is much better. Give this one a spin: THICK & SWEET HOT SAUCE 8 oz red ripe bell pepper 2 lbs moderately hot ripe red peppers (jalapeno/serrano/gusto green etc.) 12 oz red ripe Anaheim peppers 1 cup Blues Hog Sauce (or other sweet BBQ sauce) 2 cups white vinegar 1 cup cider vinegar 1/2 cup balsamic vinegar 12 cloves garlic, minced 2 small yellow onions, coarsely chopped (about a pound) 1 7-oz can chipotles in adobo 3 Tbs chopped ginger 2 Tbs black pepper 4 tsp plain salt 2 tsp dried oregano 1 tsp mustard powder 1 20-oz can crushed pineapple 4 oz lemon juice Core and seed the bell peppers, and chop coarsely. Remove stems from other peppers and chop coarsely, leaving seeds and cores. Combine peppers with all other ingredients in 6 quart or larger stock pot and bring to boil (with good ventilation). Reduce heat and let simmer, covered, one hour, stirring frequently to prevent scorching. After simmering, puree all ingredients. A good immersion blender will be adequate, or use a blender or food processer. Bring sauce back to boil and pack in sterile jars. Cover, let cool and refrigerate. Makes about 4 quarts. Batch 1: I omitted bell pepper and used Heritage NM 6-4 and Billy Goat Habaneros. Boiled then ran through a food mill. Next time let steep for a week or so before food milling. Ok, here's my official review: The "Mild" One: (heat level 1 out of 5, as written on the bottle by Jason) a bit of a kick to it, would go great with Spanish/Mexican food, perfect amount of citrus flavor with the lime juice, not overpowering. Pirate's Ghost: (heat level 2 out of 5) "heat and sweet" pretty much sums it up. Just enough of both flavors in there, with a hint of rum, and a smoky taste, very well balanced sauce. I'd use it on just about anything. Smells amazing, too. Yankee Candle should make this a flavor. Put it this way, I opened the bottle 2 days ago, and it's almost gone. Chocolate Scorpion: (heat level 3 out of 5) another excellent sauce. Just a touch of cocoa gives this sauce a very distinct flavor. Smells great, reminds me of "A1 Bold" steak sauce. The taste is hard to put into words, so I'll say it has a "dark" hot sauce flavor. Would pair well with red meat Spontaneous Combustion: (heat level 4 out of 5) I think a combination of Tim and Alison's reviews pretty much nails it. Sort of like Tabasco, not as thin and less of a vinegar taste. Definitely hot, but not overwhelming. This will definitely be my "go to" breakfast sandwich or eggs sauce. Instant Death: (heat level 5 out of 5) I've gotta admit, I was a little nervous to try this one. First bite, "Wow, that's good, but where's the heat?..." 15 seconds later: "Oh, here it comes..." 30 seconds: "Wow! Yup! Here it is!!!" 60 seconds: a little sweat under my eyes and on my brow. Even with all that heat, there's still quite a bit of flavor in there! Very hot sauce, but not "ruin the rest of your day" hot. I'm torn between a favorite. They're all very, very good, well balanced sauces. I'd have to say that Pirate's Ghost and Chocolate Scorpion are neck and neck for the crown. Overall, Jason, I'd say you hit a home run with all of these. Excellent flavor combinations, and I still cannot get over how good they smell. I wouldn't change a thing to any of them, even if I could. I can't wait for your next round of flavors (I know you've got more where these came from!). Great job, and again, congrats. Mike

Found it at the Tabasco Kemah Store back in 2002. Tasted all their available hot sauces (regular, garlic, habenero, chipotle) and find chipotle has less vinegar in it. Smoky flavor from the chipotles as well. It's a staple in our house, as are Tapatio and Valencia. There's also a spicy soy, spicy sweet and sour (lots of HFCS) and spicy teriyaki. Spicy soy is great!

de-hotting enchilada sauce

I use the recipe linked below for homemade enchilada sauce. It makes a really good sauce and you can easily regulate the heat by how much chili powder you use. My younger son doesn't like hot stuff and I put in a small amount of chili powder and he loves it. I have done different knids of enchiladas - chicken, beef, veggie - all using this sauce. I agree that the best thing you could have done was to throw out the sauce. It was WAY not worth going to more effort and expense to try to save it. Hmm the only chipotle peppers in adobe or chipotle sauce I see here at all is the little blue San Marcos can. I've never seen or heard of the one you provided in your link.

I had found Bricktown in OKC, and that was the site that completed my order before I had authorized payment. They even sent me a receipt but never charged my paypal account. The price is good at $29.25 for a case of 12, if I could get their web site to work properly.

Chipotles in adobo have ingredients that I do not want in my hot sauce, and so I may have to grill some ripe jalapenos in order to make my own chipotles or else try to find them in a Latin market. There is a Cuban market on Venice Blvd that should have them - at least that's where I bought them before. The dried ones aren't always that good, and so I mixed pasilla and ancho chilies with them when I made chipotle chili sauce before.

Lars, have you tried Tobasco Smoked Chipotle? It's light on the vinegar and has nice heat and smoke. I've not heard of Dan's but I'll look for it. I probably won't find it because we live in TN and don't get good stuff all the time.

Dees, I have tried Tabasco Chipotle sauce, and it did not have nearly the flavor of Dan's Prime. By the way, Dan's Prime is not particularly hot - it just has an intense smoked chili flavor. The chili flavor is particularly appreciated in Texas, where it is considered a sacrilege to dilute it with tomato. I also much prefer chili sauce without tomato, but I will occasionally add tomato, depending on the dish. However, the pure chili flavor always reminds me of Texas and Mexico. And I've been to Tabasco a few times.

Jane, thanks for the offer, but I would not want you to have to send something back across the border!! I haven't given up yet, and I am also prepared to take on the OKC web site and order a case of 12, since their price was so reasonable. I just won't log in to Paypal first, which I think is what caused my problem with their site. I'll register with them first and then see what happens. I just wish Gelson's was still carrying it.

I do highly recommend buying some for yourself from the Canadian source if you like chipotle.
