Tabasco Chipotle Sauce - New?

Not sure how long this has been out there, but I just saw it the other day. I like it. Seems versatile.

No, not new - I've been using it for a few years. I love it; adds a lot of flavor but not a ton of heat (good if you live with a bunch of wimps like I do :)

We've been using it for a few years too. Lee puts hot sauce on every thing.

LiLRhody: I have tried this before and i just don't seem to come out as good as chipolte i buy in the store. Exactly how long do you smoke your peppers before you throw them in the deyhdrator? What do you smoke them in? What temperatures are you smoking at? How smokey do you think yours taste compared to store bought? I wish i had a good recipe for chipolte in adobo sauce too. I smoke mine in a weber bullet smoker i have. I just put a cast iron pan on top of portable burner that i put in the smoker with hickory chips in it. The temperature is usually about 120ish if i remember correctly. I replace the chips as soon as they turn black. I smoke them until they are all the way dried. Mine have turned out pretty bitter tasting.

Ottawapepper: interesting article, however I'd like to make one point, that they may not have accounted for. I almost always investigate roots when I am transplanting, or disposing, since I think that is more important than anything that happens above ground. More then likely they used a peat dominant soil, since they didn't describe the soil they used, and peat based soils are the most common. This is the root pattern I've seen over and over in peat soils. It is my "belief" it is due to plants looking for air at the edge of the containers, not water or nutrients. Reason I say that, is that I've also examined roots of plants in 5:1:1, and found roots spread evenly through the soil, rarely circling the container in a highly aerated soil. You can have the same plants, one in peat, which appears rootbound, and the other in a bark based soil which is not rootbound. I've seen this too many times in my own side by sides both in seedlings and larger containers to not believe it is true, and a major reason I prefer a bark based soil.

Prob similar but the firmentation, vinegar, and salt changes the flavor if you are trying to replicate the Tabasco sauce in stores.

Natal, no worries, just regular foil worked! But for anyone using foil in a pinch, I turned the timer on and only let the hot pecans cool on it for about 55 seconds (recipe says 1-2 minute cool down period). I scooped them off with a spatula before they had a chance to start to cool, harden and stick. However, I did just notice that my finished pecans are darker than yours in your photo. So maybe the foil deflected more heat or something & toasted them more? I wondered if I shouldn't reduce the oven time a bit, they were smelling aromatic after about 10 min. They were good, didn't taste burned, but maybe they would've been even better. I bought enough for several batches but before I make more I think I'll get some parchment paper.

It is probably being rolled out incrementally...its newish up here.

Round here even the large bottles isn't large enough to last long so I stock up when it goes on special.

But our mainstays are Cholula and Tapatio in the litre bottles.

Sue, thanks for mentioning this. I'll look to see if they have it in our stores. If so I'll buy a bottle for Matthew. He would love this.

Found it at the Tabasco Kemah Store back in 2002. Tasted all their available hot sauces (regular, garlic, habenero, chipotle) and find chipotle has less vinegar in it. Smoky flavor from the chipotles as well. It's a staple in our house, as are Tapatio and Valencia.

There's also a spicy soy, spicy sweet and sour (lots of HFCS) and spicy teriyaki. Spicy soy is great!

I agree- it's half warmth half heat, good for the non-titanium lined GI set... Wow, I remember getting a sample in the mail *years* ago and a quick net search shows a review/ad from 2003. Time flies...
