Garlic Scapes

yes, it's that time of year, the garlic is sending up scapes and they have to be removed to ensure proper growth of the bulb.

Out I went with my trusty scissors and cut these beauties:

I trimmed the tops, which can be a bit stringy, and tossed the rest into the food processor with enough olive oil moisten it. I plopped spoonfuls onto a foil lined baking sheet and into the freezer. Now I have a Lock N Lock box full of "garlic scape plops".

I made a white bean dip with scapes, which Elery said tasted very green, but good.

I also made a batch of homemade mayonnaise with garlic scapes, also very good, no pictures but I made a chicken sandwich with leftover chicken on homemade bread and that mayo. I put some in a batch of potato salad I made for Ashley's birthday BBQ too.

So, what else can I use a garlic scape "plop" for? No cheese or nuts in it, just scapes and olive oil. I suppose I could add cheese and nuts and make a pesto...
