Small Batch Canning

I just received an email about a new canning kit.

It's from Ball, and it looks like it would be a great way to test the water, if you are interested in trying your hand at home canning. I'll put the link below.

Is it necessary? No, you could buy the jars separately, and do it on your own but I think it's has merit for walking you through the steps. It's nice for someone that just wants to make a small amount.

Thanks Nancy,

I was just curious as to what the kit contained, although I didn't think I needed anything I don't already have. But....I love that little green "basket" for the jars.!

I think I'll be looking for one, on the outside chance you can buy just that. Beats the cake rack all to pieces, in my estimation!

jam casualties. Yup, you're right Annie. It happens to all of us. I should have clarified when speaking of less pectin in overripe fruit that I was referring primarily to traditional no-commercial-pectin preserves. Peaches don't have much pectin at the best of times. (They're also low-acid.) Without commercial pectin the condition of the fruit is critical. But you could use commercial pectin and improve the odds considerably. The problem with commercial pectin, though, is you also need more sugar for the pectin to "work." (I know, it's counter-intuitive.) Therefore the jam tends to have less of the true fruit flavor. Unless you use Pomona Pectin. You could jell water with that and can use as much or as little sugar as you like. I don't care for Pomona, but it does have its uses. Carol

I remember helping my mother put up quarts and quarts of dill pickles or peaches or pears in all day marathons, but I rarely can that way myself. I'll typically can maybe 8 quarts of dill pickles in a year, 1 or 2 quarts at a time. Why? Well, I don't NEED 30 quarts of dill pickles, and I have only a small patch of pickling cukes in my garden which typically yield enough for a quart of pickles every day or so. So, I come home from work and make a quart of dills. A typical recipe for jam yields 5-6 half pints, so that's what I make unless I have a real plethora of some fruit or another and it makes a jam people particularly like, in which case I'll make 2 batches. The most I ever do at any one time any more is probably bread and butter pickles - I'll make 9-15 pints of those at a time. I also freeze fruit in quart bags for pies and other baking during the year, and pretty much only freeze tomato puree anymore. I use the puree more than I ever used canned tomatoes, it's easier to do (the pressure cooker is a pain in the arse IMO), and ultimately it takes up less storage space. I do more canning and preserving when I do small batches of things, because I can do a bit of this or that when I get home from work, rather than taking on a marathon in the kitchen.

I've recently looked at the links for the steam canner, and I believe some important information is missing. From years of using it, I have found that when you can whole tomatoes, raw pack, you must allow the canner to cool for almost 15 minutes before opening it to avoid siphoning, which will be severe if you open it too soon and will often cause the jars not to seal.

I like the looks of that integrated silicone basket and lifter.

This isn't a canning kit, but another option if you're thinking of canning small batches is this stainless mini-rack from Kitchen Krafts. They're the only company that carries it. (P.S. It's USA made.)

I got one of those canning kits when I first started out, with a rack like the one Carol (Readinglady) linked to. I somehow lost the rack, darn it! And I really miss it, but I can live without it, so since money is tight I haven't replaced it. They are great!

Kitchen Krafts is a little pricey, but they have some items that just aren't available anywhere else. Years ago I bought the larger stainless rack to replace the rusted disintegrating one in my old water bath canner.

(And there's nothing quite like tempting someone else to spend money on canning goodies!)
