Pineapple Coconut Self Frosting Cake question.

Walnutcreek, do you think this will work in a small bundt pan? Or will the "good stuff" end up at the wrong end of the cake when inverted? I want to make it today. (I do have the pan the recipe calls for.)

Oh, yes! The recipe for those who missed it.

Pineapple Coconut Self Frosting Cake

1 8.75-oz can crushed pineapple in syrup
1/3 cup shortening
1/2 cup sugar
1 teaspoon vanilla
1 egg
1 1/4 cup all purpose flour
1 1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup flaked coconut
1/3 cup brown sugar
1/3 cup pecans
3 tablespoon margarine or butter (melted)

Thoroughly drain pineapple, reserving 1/2 cup of the syrup. Beat together shortening, sugar and vanilla. When creamy, beat in egg. Sift together flour, baking powder and salt; add to creamed mixture alternately with reserved syrup, beating after each addition. Spread 1/2 of batter in greased and floured 8" round or square cake pan. Try to evenly layer with crushed pineapple. Cover with remaining batter. In small bowl, combine coconut, brown sugar, pecans, and butter. Try to sprinkle evenly over batter. Bake at 350Â° for 35 to 40 minutes.

this looks so good, and, I have all the ingredients. Do you think it will matter if I coarsely chop pineapple chunks that are in "natural juice" instead of crushed in syrup? Btw, I love recipes that say "try".

I've been playing around with a white cake version of this for cupcakes. It's bake sale season around here and cupcakes are always a big seller. The problem I kept running into was texture. My 15 yr old said it tasted like cornbread, meaning a coarse texture. I ended up using cake flour and superfine sugar and that seemed to do the trick. The original recipe calls for all purpose flour so I got out my scale and weighed an equal amount of cake flour (125g/cup). I'm not sure on the substitution ratio in cups of cake flour for all- purpose. I also added in about 1/3 c of sprinkles to make them funfetti:) This is my version of the recipe Vegan Cupcakes from allrecipes. This is definitely not vegan anymore. 2c all purpose flour (I used 250g cake flour) 1 1/2 c buttermilk 1 c superfine sugar 2 t baking powder 1/2 t baking soda 1/2 t salt 1/2 c oil 1/2 t vanilla 1/2 t almond extract Preheat oven to 350�. Line 18 muffin cups with liners. In large bowl whisk together flour, sugar, baking powder, soda and salt. In separate bowl whisk together buttermilk, oil, and extracts. Pour into the dry ingredients and mix just until blended. Spoon into muffin cups and bake 15-20 minutes.

There are may versions of the Better Than Sex Cake.This recipe was given to me by an aunt. I made it once many years ago to take to work. It was a hit. 1 (18.5 oz) yellow cake mix 1 (1 lb 4 oz) can crushed pineapple 1 C sugar 1 ( oz) pkg vanilla pudding mix (not instant) 1 C whipping cream, whipped & sweetened flake coconut, lightly toasted Prepare cake mix according to directions on pkg. Pour into 13 x 9 pan and bake as directed. Cool. Combine pineapple & sugar & bring to a boil. Cool slightly. Poke holes into cooled cake with a fork. Pour pineapple mixture over the cake. Prepare pudding mix according to directions. Cool. Spread over pineapple & chill. Just before serving, cover with whipped cream & sprinkle with coconut.

Terri, I *could* tell you the cupcakes were made with magic, no wheat at all! And I *could* tell you that no sugar was involved--just the sweetness of more magic! Yeah, I could tell ya that. But, hey, good for you in your efforts to avoid wheat and refined sugar! I try to avoid white rice, white bread, and potatoes, just to name a few, and I also try to not eat things with sugar in them (okay, that doesn't always work! LOLAM). Cupcakes, cookies, cake--most of the time, I don't have them in the house. Another really GOOD thing about being a retired teacher is that I don't get "exposed" to all the goodies in the faculty room, the donuts every Friday (right next door to my room!!!!!), or the special yummy things from the students! Oops I should have posted that recipe. Here it is: ORANGE COCONUT CAKE (Ruthanna - Cooking Forum) 1 box Duncan Hines golden butter cake mix 1 can mandarin oranges, including any liquid in the can (11-oz.) 4 eggs 1/ 2 cup cooking oil like Crisco oil Mix together in a large bowl and beat with mixer until oranges have broken up and are distributed through batter, about 4-5 minutes, scraping sides of bowl. Divide batter evenly into 3 greased round cake pans and bake at 325 degrees 20-35 minutes or until done. Remove from oven and set aside on racks to cool. 1 (20 oz.) can crushed pineapple with juice 1 small package INSTANT lemon pudding mix 1 (7 oz.) package sweetened flaked coconut 1 (8-10 oz.) container of Cool Whip (can use low fat but not the fat free) Mix pineapple and pudding mix until smooth in large bowl. Add coconut and mix. Blend in cool whip gently but thoroughly. Assemble cake, spreading a lot of cool whip mixture between layers. Frost sides and top. Chill overnight in the refrigerator. Notes: finished cake can be frozen and then defrosted in the refrigerator. You can also bake it in two pans; just increase the cooking time.

I had the same thing, Jo. Chunks, not crushed. I tossed them in the blender though the FP probably would have been a better idea but more set up time. The blender lives on the counter, the FP does not.

It's very yummy and not too sweet, especially with the layer of unsweetened pineapple. I also used all brown sugar as I am out of regular sugar at the moment. As a result it has a caramel flavor. I also made slightly more topping and baked it in a square ceramic casserole dish.
