Poached Salmon Question

I've been poaching salmon successfully for many years, but now that I buy it occasionally at Costco, I'm poaching more than for just one meal. The whitish "scum" that occurs after poaching, is there anyway to not have it occur? It's particularly ugly on the leftover fish! I don't recall seeing it on fish poached by a restaurant.

Suggestions?
