Fish Roe From Sundry Species

I'm seeking information on preparation, serving and eating qualities of fish roe from species not normally used for roe commercially? In other words, fish other than sturgeon, salmon, lumpfish, shad, etc.

To be specific, the large striped bass I mentioned in another thread had some very big and nice looking roe sacs. I set aside a couple of these and am eager to use them. However, I don't know what process, if any, is necessary to make this roe palatable.

My favorite roe is the large red salmon roe I get on sushi. The striper roe is small and orange in color.
