I may have kidded them too much, about eating.

But he is Italian and knows, if you do not eat a lot and

Sorry I took so long to Post the Ingredients, for the Spice Mix. ( still doctoring )

I have gotten away from the added time of Sauteeing, etc.
But everyone to their own taste.

Got the Spice list all typed up.

Spaghetti Sauce Spice Mix ( LOU�S )

Enough for one 28 Oz. can of Crushed Tomatoes , one Puree and
one small can of Tomato Paste.

Mix can be made up and placed into Zip lock Bags and
Stored in the freezer.

Ingredients:

One level tablespoon of Garlic Powder ( add more to taste )
One tablespoon of Onion Powder.
3 Bay Leaves
1 teaspoon of Parsley
Half teaspoon of Basil
Three quarters teaspoon of Oregano ( or to taste, if it is strong )
One teaspoon of Salt or to taste. Add last after tasting.
3 teaspoons of Sugar ( according to Acidity )
An Italian pinch of Powdered Cloves
Pinch of Old Bay and Paprika
One quarter teaspoon of Black Pepper
2 Teaspoons of Chicken Flavored Soup base.

2 Tablespoons of Parmesan Cheese, added after the Sauce is cooked.

I add one half pound of Sausage and ground Beef that is chopped , Saute�d a little and fat removed.
Then simmer about one and a half hours.

If Beef or Sausage is not added to the Sauce, add some Beef Soup base.

This is a Basic Spice mix . I use it for Pizza Sauce also. Add whatever you like.

Back when this thread was first posted,
I mixed up a couple of batches of Lou's spices.
All my plans fell by the wayside,
(happens often around here)
So I threw them in the freezer.
And promptly forgot them.
So yesterday,
While trying to decide what to cook,
I 'discovered' them.
Used one for spaghetti last night.

It was really good !
So, thanks, Lou,
For posting your recipe.
I will be keeping a couple of packages of the 'mix'
On hand now.

I can't compare it to the mix
Dedtired was looking for,
As I'd never heard of that brand.
But this is very good.

I wasn't sure where to post this,
Whether it belonged here,

Rusty, glad you chose to add to this thread as I meant to try Lou's mix and then promptly forgot and the thread scrolled on down.

Lou, the cloves and Old Bay are throwing me and I can't envision the taste they add to the gravy. Do they add more of a bottom note smokeyness or a top note zip? Does my question make any sense?

The Cloves are my MILs recipe, she put 3 whole Cloves in a batch. The Old Bay is my addition.
Why wonder ??? Just try it.

Everyone loved my Spaghetti and Meatballs when I had the Pizzeria.

Lakemayor ( Karen and Steve ) are the only ones from the CF,
that have had my Rigatoni, Sausage and Meatballs,
in my Meat Sauce.

Paulines, I understand what you are asking,
But I'm not good at 'disecting' flavors.
And there are no left overs now,
for me to try to figure it out.

Neither the cloves nor the Old Bay jump out at you,
There is just a hint of something a little different.
I don't think I could figure out just what was different
If I hadn't made the sauce myself.
It is just plain very good! !

I agree with Lou:
Try it.
You might like it.
If you don't,
No great loss.

Oh, I did use less garlic powder than specified,
Just because I can not depend on it
not causing some (okay, a lot) gastric distress.

I'm a little late with my response to this thread but wanted to let everyone know that Lou's sauce is the best. He served it when we stopped by his house on our trip out East last fall. And, yes Lou we did eat a lot but that says something for your cooking doesn't it. In fact, I think I gained two pounds after that meal and the cinnamon buns. They are to die for!!! Can't you figure out how to send some of those to me??????
