Mmm some good looking dishes at the end of the last thread...I'm thinking of Gina's dinner and Ann's pasta with Italian sausage.
Going back a few days we had a Pariser Schnitzel with red cabbage at the Austrian last Saturday....love the way they do that in egg and seasonings without bread crumbs. Theirs included a lovely mushroom gravy.
Sunday was not Mother's Day for us so we had leftovers....more baked fish and some pasta and salad. But I did put together a strawberry shortcake (like minds eh Gina?) from a piece of bakery lemon cake, berries and sugarless whipped cream.
Monday we were out again....very warm day so I just had a ham omelette with salad and a few chips while Wolf had his favourite Austrian cabbage roll.
Today I used up those chicken tenders I found to make a super easy and delicious lunch dish:
Almond crusted chicken tenders in spicy peanut dipping sauce.
I used small almond crumbs rather than the finely ground almond flour and Marilyn's recipe for the peanut dipping sauce.
It was heavenly and I will make that many times over the next months I'm sure!
I dipped them first in a beaten egg mixed with a TBS of Dijon mustard mixed with salt & pepper before putting them on the oiled roasting tray and baking at 475F for 14 minutes. Served with steamed yellow yam, green beans and carrots.
10 - 12 chicken tenders
1 TBS dijon mustard
1 egg
salt & pepper
1/2 cup almond crumbles (ground to large crumbs)
1. Preheat oven to 475F (260C)
2. Beat egg together with with Dijon, salt and pepper. Dip tenders in it and then in almond to coat.
3. Coat oven tray with oil and
and place in middle rack of oven.
4. Bake 12 - 15 minutes until cooked through
Marilyn's Spicy Peanut Sauce for dipping:
From Marilyn (DanaIN):
1/3 cup smooth peanut butter
1 garlic clove; minced
2 tablespoons fresh lime juice
2 tablespoons soy sauce
1 teaspoon sugar
1/8 teaspoon cayenne, or to taste
1/3 cup water
Combine in a blender until smooth and allow to stand to blend flavors.
