Cooking frozen hamburgers

In the past, I've almost always cooked hamburgers from fresh ground beef (adding minced onions and some seasonings but no bread or eggs), but recently, after forming the patties, I stuck them in the freezer uncooked, in ziplock bags. When I eventually cooked them, I didn't thaw them but cooked the frozen patties in a large frying pan, so they thawed as they cooked. They tasted fine but had a tough, rubbery texture. What is the reason for the texture change? Is it the ingredients, the lack of thawing before cooking, or some other reason?
