help help! bread question -- need answer by 5 pm edt

okay so I made my bread dough, and then I set it to rise for 90 minutes, and THEN looked at the clock: I have to leave in ONE hour. For a haircut appointment; I am sure I'll be gone at least an hour.

It's challa dough. My plan was to make it, shape it, and let it rise in the refrigerator til Friday a.m., then bake. Usually I don't; I either freeze it after braiding, then let sit 6 hours and then bake, or else I let it rise again after braiding and then bake. (Half I will be freezing, shaped, for another week.)

So what do I do? Refrigerate dough, then take it out to rise?
