making lemon sorbet

I am making Meyer Lemon Sorbet. The mix is now in a shallow square glass baking dish, getting slushy in the freezer. I am NOT using an ice cream maker.

I used 1/2 of the frozen cubes of Meyer lemon juice that I had in our freezer, to test this recipe before making the real thing for our dessert party next weekend. I will sample it today or tomorrow and if it turns out well then I will make another batch to combine with this one for next weekend's dessert party.

My question: What is the point of processing it in the blender or food processor, after it is already fluffed up with a fork and frozen firm? Is it really necessary to do that, or can I just continue fluffing with a fork until the mixture is well-blended and slushy throughout, then freezing until firm?

What I would like to do is combine two separate batches into one nice serving dish, and racking my brain for the best way to do that.
