Substitute for cayenne?

I didn't know I was out! I have Sriracha, Tapatio Hot Sauce, Tabasco (probably too vinegary), and chipotle powder. I'm leaning toward the Tapatio as it has no vinegar. Chipotle has that smoke flavor and will add something else to the dish.

I am making Cindy's ÃtouffÃ©e.

Eileen, I have made her dish many times and for me the chipolte would be my first choice because I love the smoke flavour.....but Tabasco is more in keeping with the dish. For as much as you would use I can't imagine it being to vinegary.

Then again I don't know from Tapatio.

Sriracha would be my choice. I am using it more and more and I love the flavor.

Tabasco - yep too vinegary
Chipotle - too smokey for etouffee IMO
Tapatio - would be my second choice, but I would rpefer Sriracha

Remember our parents and grandparents used 15% Vinegar for pickling! Now it’s only 5% Vinegar and you are cutting it 3:1!! Not a good idea! You have 2.5% Vinegar just using a 1:1 ratio! Your canning salt ratio needs to be 1 measuring cup per gallon of brine (vinegar + water combined). i don’t know if you are boiling them on a low boil for a minimum of 12-14 minutes for ”low-temperature pasturization” and making certain they ”set up properly” or stay sealed prior to storing them on the shelves to cure for 30 days, or if you are planning on refrigerating them once you finish canning and allow them to cool down! if you fail to boil them and place them on the shelf, they will develop a botulism that can be fatal! Just my thoughts! Been putting up pickles for over 40 years and two of my proteges have used my recipe and won the Blue in the Minnesota State Fair 2007 & 2014

I just made this and it is absolutely wonderful! Instead of the oregano I put fresh cilantro. I tripled the recipe and it made about 10 pints. I added more fresh garlic than what is called for AND I added about 1/2 cup granulated in there- maybe it's the Italian genes but I always have to have much more than required, lol. I also added about a tbsp of, shhh!, chicken boullin to counteract the extra tart from putting in an extra 1/2 cup of lemon juice. You can't taste it, but it balances it all out. Awesome, I know my family and friends will love this!

What is a substitute for Seaweed or Kelp Meal?

from what i have read seaweed or kelp meal can not be substituted by anything. the whole purpose is to provide trace nutrients that could be lacking. some of these elements are not even needed by plants such as iodine yet are essential to animal health so it is indirect consumption first getting the nutrients into the plants then eating the plants. arsenic is another essential to animal life yet totally unneccesary to plants as well as we currently know. sea products tend to contain almost every mineral in trace amounts so fish meal or emulsion could possibly contain some or all of the things kelp or seaweed provides. Kelp meal is recomended at 1 cup per 100 square feet annualy in a book gardining for maximum nutrition so it is used in very minute qty. I can't help but wonder why bother with secondary igestion why not just consume minute qty of the meal directly in say stews soups gravies etc. Part of the logic no doubt is that the application to the soil also allows for any trace elements lacking in your local ecosystem and thus not present in localy produced organic debris. Importing components of the compost heap from distant sources may also have some advantagous effects such as using stable cleanings that have sawdust from nonlocal trees and feed comprised of products from several regions. so there is no substitute for seaweed or kelp meal to the best of my knowledge. I have yet to find a reasonable priced source. Anyone living near the coast could simply harvest rinse the salt and add the seaweed or kelp to the compost heap those of us inland must import to obtain it and prices seem to be way to high for what it is. Anyone knowing of low cost commodity co-op type suplies please post them.

Cayenne peppers rotting as they ripen

Hi Capoman, I'm trying not to blame the peppers! :-) I'm a pepper (and gardening) newbie, so my first instinct would be to blame myself . . . but my other peppers are doing great. I'm in East TN (Zone 7a), and all of my peppers (9 plants) are growing in a 4x8 foot raised garden bed in a mix of topsoil and compost. I have fertilized with a slow-release synthetic, as well as alfalfa meal and fish emulsion. The cayenne lives between a jalapeno plant that has done well (I haven't had the patience to wait for them to ripen, though), a Big Bertha bell that has been slow but given me some nice peppers, and a habanero that is producing ripe fruit like mad. I will say, if it matters, that I sustained some frost damage a couple of weeks after planting, and growth was stunted in all 9 plants. But they all responded and took off in June, and have looked very healthy ever since. None of the others have shown any signs of disease or stress. Thanks for any input.

I split the difference and used Tapatio and Sriracha. It seems yummy to me.

I like that smoke flavor too but wasn't sure in this dish. I did use some white wine in place of a little of the chicken broth. And a bay leaf.

I love Cindy's recipe; glad it turned out well and you enjoyed! If it had been me I'd have have voted "none of the above" and just put out my variety of hot sauces to choose from at serving. I'm thinking none of them would mimic cayenne without adding a distinct flavor of their own.

Most of my cooking doesn't get "served." I cook and leave it in the frig for Alice to eat when she feels like eating. Other times it in placed in containers and given to friends who don't cook. This entree is being divided between my frig and a friend.

Red pepper flakes? If you have those, that's what I'd substitute for the cayenne.

It's only mildly spicy. Some heat seems integral to the recipe and it didn't occur to me to leave it out completely. I doubt I would have left it out completely anyway. We'll see if it's a keeper recipe with the gang and adjust accordingly next time.

I don't think any of the mentioned "heaters" would be bad.....just different from each other...
I would say it all will work!
