what do you like on your taco salad?

It's my job to make a meal for those gymnastics judges again for DD's meet. The menu assigned to me is taco salad, dessert, tea.

Besides the lettuce, meat, shell, I've got on the list:

tomato

green onion

olives

cheese

salsa

sour cream

Is there anything else you like on taco salad? Maybe some jalopenos for the brave ones?

Dessert will be refreshing yogurt pie recipe someone posted here. A key lime and some kind of berry (I'll decide when I see what berries look fresh at the store, make it extra special). That oughta be good after the spicy, don't ya think?

Sorry, this should be easy, but I need validation on cooking/menu things. ;o)

I grew up eating tacos and tortillas, but not from fast food restaurants. Here in L.A., I like El Abajeno in Mar Vista (typical family style Mexican), and there are plenty of regional Mexican restaurants here (especially Oaxacan) that I like, and even a couple of Yucatecan restaurants. Yucatecan food is my favorite in Mexico, and Oaxacan (especially in Oaxaca) is low on the list, but I'm able to find some exceptions. MacArthur Park is a good place to find tamales, and there are several local companies that make gourmet tamales that I like, but they can get expensive. I don't know that much about Taco Bell, except that it began in California and I think has food that is similar to Tex-Mex. Growing up in Texas I went to locally owned Mexican restaurants - I don't remember chain Mexican restaurants from when I was a child, but that was forever ago. Hello, Here is a layered taco salad that you might like: Salad: 1 medium head iceberg lettuce, chopped 4 cups cooked white meat chicken, cut into 1/2 inch dice 2 large tomatoes, cored and cut into 1/2 inch dice 1 cup sliced, pitted ripe olives 1/2 cup scallions, sliced including 1 inch of green leaves 10 pieces bacon, cooked, drained and crumbled 1 1/2 cups grated sharp cheddar cheese (about 1/2 lb) 2 cups crushed corn chips In a large salad bowl, preferably clear glass or plastic, layer in this order the lettuce, chicken, tomatoes, olives, scallions, bacon and cheese. Can be prepared up to 12 hours in advance to this point. Cover with plastic wrap and refrigerate. Dressing: 1 large clove fresh garlic 2 medium avocados, peeled and pitted 3 tablespoons strained fresh lemon juice 1 cup sour cream 1/2 cup vegetable oil 1 teaspoon chili powder 1 teaspoon salt 1/4 teaspoon ground black pepper 1/2 teaspoon ground cumin 1/2 teaspoon Tabasco sauce In the bowl of a food processor fitted with a steel knife, drop the garlic in with the processor running to mince it. Then place the avocado, lemon juice, and sour cream in the work bowl and process until smooth. Add the vegetable oil, chili powder, salt, pepper, cumin and Tobasco. Process until well mixed. Transfer to a bowl or jar, cover tightly and refrigerate until time for final assembly. About 5 minutes before serving, remove plastic wrap from salad bowl. Spoon dressing over the top. I like just about any kind of taco salad but I've never had one with French dressing. I just discovered Mexican Chorizo sausage and love what it can do for a taco salad. I also like a taco salad made simply with grilled, seasoned chicken strips, black bean and corn salsa, sour cream, tortilla chips and lettuce. Taco Meat 1 pound ground beef, chicken or turkey 4 ounces Mexican chorizo sausage (optional) 1 small onion; chopped 1 teaspoon ground cumin 1 teaspoon chili powder salt and pepper to taste 1 tablespoon chopped jalapenos 2/3 cup beef or chicken broth or stock Brown meat along with onion in a medium skillet until cooked through. (If the meat is very lean, it may be necessary to add 1 tablespoon olive oil.) Stir in remaining ingredients and simmer until liquid is evaporated. If desired, stir in sliced jalapenos *I like to use the sliced jalapenos that come in a jar and also add some of the liquid to the meat mixture. Black Bean and Corn Salsa 15 oz. can black beans; rinse and drain 1 cup frozen corn; thawed 1 small onion; chopped 1 Roma tomato; seeded and chopped juice from 1/2 fresh lime kosher salt and fresh ground pepper to taste 1/2 teaspoon Cajun seasoning of your choice 2 tablespoon chopped cilantro Combine ingredients at least 1/2 hour before serving with tortilla chips or on a salad. *This is also great served over fish. Iceberg or romaine lettuce, spinach, tomatoes, onion, bell pepper, peas, broccoli, carrots, beans, sometimes turkey or chicken, and ocassionally cheese or walnuts are some of the things I add. Top it off with low-fat or no-fat dressing. Had a big salad with dinner tonight with lots of the above stuff in it and low-fat Sweet and Sour Poppyseed dressing. Yum....

My favorite Mexican restaurant makes what is called Ranchero Chicken Salad...which is in a big crisp taco shell. There is lettuce, tomato, black olives, purple onions, guacamole off to the side, and sour cream also to the side. I usually get it with Ranch dressing but it is also good with chili con queso, and of course, chicken, which is sort of stewed.

I like just about anything on my taco salad, except beans.

Around here they make a different kind of Taco Salad for large gatherings.

1 lb ground beef
1 onion, chopped
1 pkg taco seasoning
1 can kidney beans
small can olives
1 chopped tomato
1 head lettuce, shredded
1 large bag Dorito's - Nacho flavor, crushed
1 bottle Catalina or Thousand Island dressing
2 cups shredded cheddar cheese.

Brown hamburger and onion. Add taco seasoning according to mix directions.

In a LARGE bowl mix seasoned beef, beans, olives, and tomato. Right before serving, mix in lettuce, Doritos, and cheese.

This is really good and is great for a crowd.

All of the items mentioned above except cilantro. I'm one of those that don't care for it. I make taco salad for myself for lunch often and don't have the shell so I crumble Doritos. then for a dressing,. I mix ranch dressing and mild taco sauce, 1/2 & 1/2 Dottie
