My First Rhubarb Pie of the Season

I'm a little late. I usually bake my first pie before the end of April. Just slow getting around to it.

Wow.

I love rhubarb pie, I used to make one every spring and my dad and I would eat the whole thing in about two days.

Rhubarb is one of our favourite pies.

I've been wondering if you'd taken a Sabbatical from cooking. You haven't been posting on the WFD thread.....but I see you're still busy, and it looks incredible, as always.

Yup the leaves are toxic. I have read, that you would have to consume about 5 lbs to be deadly toxic, a few bits cooked or raw would give massive stomach discomfort. Someone recently on the garden forum needed a plant id, being in a new home, and thought the rhubarb coming up in the yard was swiss chard, yikes. Like Annie, i slice or snap off the leaves right by the plant and tuck them under and around for a mulch. (not that anything really grows near or under it), but rather not put them in my compost. Just stumbled across a recipe for rhubarb bread. It softens and cooks down quickly and loses all shape if sliced. Not at all like celery, zucchini, etc that hold their shape. Also seeing recipes pairing it with ginger.

Cook it down without much sugar at all and add it to a mustard sauce or your bbq sauce...rhubarb is not always about sweet. It is the glorious first signs of spring...use it in a veggie dish. I can't wait for those knots to leaf. The last few years i have been using it in everything and keep experimenting...

I love love love rhubarb! So very sad to hear/see these; envy envy envy. Living in the South they just don't grow here - too humid in the summer for them to survive, not even for one year. What they offer in the grocery stores here are questionable because the produce manager has no idea where they come from - US, but not what State, nor whether wild or mass cultivated, and under unknown growing conditions. Would you like to trade some for organic blueberries or Black Mission figs or Asian pears? I can almost taste them - relying on memory of long ago Ohio as a kid where they would take over most of our little garden with their beautiful lush (but toxic leaves) and fiery red sour stems. A little sugar, a pinch of salt, some buttery crust. Do you see me drooling here?

That pie is gorgeous, ann_t! My grandmother's rhubarb pie is a very fond memory. Along with pie, I also like using rhubarb for a rustic crostata. It's also very tasty in a chutney served with grilled pork or chicken. It seems rhubarb is the one vegetable used strictly as a fruit, at least as far as I know. Our neighbor grows it here in Southern CA and is always very generous with sharing his crop.

Thanks Mom. I gave half it away to our neighbour so Moe and I wouldn't be tempted to eat it all.

Jasdip, I just did an update on WFD. Didn't realize it had been that long since I posted. I don't think I have ever taken a sabbatical from cooking.

Yum, Ann, that looks so good. I like plain rhubarb pie the best, not mixed with strawberries or anything, just all rhubarb, yum.

I plan to cut the first stalks of mine tomorrow, so I see pie in my future really soon.
