Mary, I'm very happy with my 11" cuprinox style fry pan. But like you, I've spent time reading all the cookware articles. If there is one pan in your arsenal that you want to be thick and heavy, it would be the frying pan, (at least for some cooking). I think the Demeyere Atlantis skillet would be a great choice because it is lighter,(than copper or iron) but still thick and would never warp at high heat-thanks to the stainless. Good cookware will sometimes make up for a less than perfect heat source. I have a powerful gas range with nice big star shaped burners, so I don't really need the thickest pan. But if you were to sear a steak with a weak burner, you would like a nice thick pan to hold more heat - once you preheat it. Otherwise, the meat would 'suck' the heat out of the thiner pan, before the burner could catch up and supply enough heat to get it hot again. I remember you saying you weren't sure on what you were cooking with, but wanted a good fry pan that's not too heavy. I think the Demeyere would be a good choice, I don't own it but I've seen the fry pan and it looks good.- should be easy to clean and is induction capable. I like the inside silvernox finish as well. Price is tough to swallow, but I saw one on sale that was the floor sample at a Sur La Table store...- so if you look long enough? What do I think about the All Clad copper core stuff? It is bomb proof, and I'm really impressed with it. It's not induction capable, and it's not particularly light (because of the copper). Total thickness at the edge, even with all those plies is not very thick. My guess is that the Demeyere Atlantis would do better as a fry pan, even without the copper, because the aluminum is so thick, - while remaining fairly light. Sure copper heats a little faster.. but the race isn't always won by the fastest and fry pans are one item that thickness and therefore heat capacity is just as important.

I would braise them on med-low heat in chicken stock, white wine, butter, minced onion or shallot, minced chives or scallion, herbs of your choice, salt, white pepper, and add some heavy cream for a quickie sauce. If no heavy cream, use half & half mixed with a little flour. (Added to the wine, half & half alone has a small risk of curdling, whole milk a larger risk, low fat milk will curdle. The flour helps prevent curdling, but you then have to cook it longer, so I prefer heavy cream.) If no stock, then I wouldn't say no to a boullion cube. (Or, if you want to play around, put two of the tenders in your blender, with a cup or two of water and a bit of onion, celery, carrot - in other words, the stuff you'd put in a chicken stock - and liquefy it, then transfer that to a pot, heat, and simmer while adding more water as needed, plus salt and seasonings until it approximates a hearty chicken broth.) The problem with tenders is they are thin, lean, boneless and overcook so easily. So I'd do this braise backwards. First get the wine, butter, stock, and minced stuff to a simmer, add the cream, adjust salt and pepper, and then when the flavor and consistency is as you like, last add the chicken and cook it, which will only take a short time.

I have a thermometer that has a clip on it so that it will stay in place, but it's not digital - it's a candy thermometer. Still, it works great for frying, and I fry at between 350° and 380°. I never let the oil get below 325°, or else the food will get greasy, and so it's important not to put too much food in at once. The more oil (or deeper), the less it will be affected by the introduction of food. For chicken, I always soak it in buttermilk first. I fry quite a few things, and I generally use a wok for most of them, but then I usually make either tempura or empanadas I save the leftover oil for making popcorn, which I also make in the wok. A Bit of Nostalgia.......does anyone remember the Chalfont in Cape May, N.J. or the Chalfont-Haddon Hall in Atlantic City ?? Chalfonte's Southern Fried Chicken 1 frying chicken -- (3-pound) quartered Salt 1 cup flour 2 tablespoons paprika Black pepper to taste 2 cups shortening or corn oil (or a 2-inch depth for frying) 1 medium onion -- sliced 1. Soak the chicken in salted water for 1 hour. (Add 1 tablespoon salt to each quart of water.) Drain chicken and pat dry. 2. Meanwhile, in a bag or bowl, mix flour, paprika, salt to taste and pepper. Add the chicken and shake to coat thoroughly. 3. In a large skillet or deep fryer, heat the shortening or oil to 365 to 375 degrees. Place the onion in the hot oil. (Adjust the heat as needed to keep the oil sizzling moderately, but don't let it burn.) 4. Add the chicken to hot oil, again adjusting the heat. Fry for 10 minutes. Turn chicken and fry until tender, crisp and browned, about 10 more minutes. (Test for doneness with a fork, or watch for the breast meat to split along the muscle.) Note: As long as the oil is sizzling, moisture is being forced out of the chicken as steam, preventing the meat from absorbing excess oil. The Chalfonte chicken still sizzles in the pan Today's request takes us back to 1990, when a visit to the Chalfonte in Cape May, N.J., found the chef at that grand Victorian resort hotel holding court in her bright, airy kitchen on a sunny August day. Quick as any teen, Helen Dickerson simul- taneously supervised the dinner preparation, answered a reporter's questions, and kept an ear tuned to her favorite afternoon soaps. At 81, Miss Helen (as she liked to be called) still ruled her kitchen domain, though the heavier cooking chores had been delegated to her two assistants, her daughters Dorothy Burton, then 63, and Lucille Thompson, 61. Miss Helen shared memories of her more than 70 years at the Chalfonte, 45 of them in charge of the kitchen, along with recipes for dishes such as the fried chicken that continues as the star item on the hotel's Sunday dinner menu. Keys to the recipe's success are the soaking, which keeps the chicken moist, plus the onion flavor and the sizzling temperature of the oil.
