Need Some 'Easy' Recipes

My daughter travels alot with her work, she usually rents a room with a kitchen. She is not the greatest of cooks, have been trying to think of some easy one dish recipes (that have been tested). She tells me she makes chili most of the time which lasts her for the week.

Any suggestions that you have tried that are "good".

I like to make Pot Pies with Hamburger or Chicken.

You can scramble Hamburger or use Canned Chicken.
Add one can of Creme of Onion or Creme of Mushroom soup to a can of mixed veggies.

I make small can's of biscuits to go with it rather than a crust for the Pot Pie.

That should provide several meals.

What I call goulash. Elbow macaroni, tomatoe sauce, hamburger, onion, garlic salt. Cook the macaroni till done. Cook the hamburger, with garlic salt and onion, and add the tomatoe sauce. Mix together, and add a squirt of ketchup. Add some velveeta cheese or other cheese of your choice.

Carol, interesting that your dad went through something similar. I think God allows those things to happen (and keeps us protected from harm within them) for a purpose--maybe to let us know a tiny fraction of what He protects us from each day so we know how loved we are, and how dependent we are, though we sometimes think we're self-sufficient. Maybe different people get different messages, too. Still, it's all good. Thanks for the added info on the peppers/acidity. I'm definitely trying the recipe you've just posted, and I think I'll go with the variation, since I like peaches better than mangoes, and I have so many of them! I'm also going to try something else, but I don't know if it will work. I like the flavor/texture of the uncooked freezer jam, but I want it spicy. I think I might put the cooked habanero/orange mixture from the "Cold Mornings" recipe in the fresh peach freezer-jam recipe and then freeze it. It may work, or it may flop, but if it flops, I think I'd still be able to use it as a glaze. We'll see! Thanks again for all your help!

I love rhubarb, I even have a rhubarb section in my recipe file. I hope daisyduckworth sees this, she has some great recipes. Here's a few of mine: CRUNCHY SUGAR RHUBARB MUFFINS 2 cups all-purpose flour 1 cup sugar 1 tablespoon baking powder 3/4 teaspoon salt 1/3 cup vegetable oil 3 large eggs, beaten 1/2 cup milk 1 cup rhubarb, cut into 1/2-inch pieces 1/2 cup large-grained sugar like Demerara (optional) Preheat oven to 350. Grease muffin pans or line with muffin papers. Sift together dry ingredients. Add oil, egg and milk. Stir until just mixed. Gently fold in the rhubarb, then fill the muffin cups two-thirds full. Top with the Demerara sugar and bake for 20 minutes, or until the muffins spring back when lightly pressed in the center. Let cool for 5 minutes before removing from pans. Makes 10 to 12 muffins Rhubarb Crisp with Ice Cream 24 ounces fresh rhubarb, trimmed, cut into 1/2-inch pieces (about 5 cups) 2/3 cup sugar 2 tablespoons all purpose flour 1 tablespoon unsalted butter, melted 1/2 teaspoon grated orange peel 1/2 teaspoon ground cinnamon Streusel 2/3 cup (packed) golden brown sugar 1/3 cup chopped toasted walnuts 1/4 cup all purpose flour 2 tablespoons unsalted butter, melted Buttermilk Ice Cream For rhubarb: Preheat oven to 375F. Mix all ingredients in large bowl to combine. Divide mixture among six 1-cup rameki Place ramekins on large baking sheet and bake rhubarb 10 minutes. Meanwhile, prepare streusel: Mix golden brown sugar, chopped walnuts, flour, and butter in medium bowl. Crumble streusel over rhubarb, dividing equally. Butter 13x9x2-inch glass baking dish. Whisk 1 cup sugar and next 3 ingredients in lar bowl to blend. Mix in rhubarb and cranberries, then concentrate. Transfer to prepared dish. Bake until heated through and bubbling, about 30 minutes. Meanwhile, beat butter and remaining 1 cup sugar in medium bowl until blended. Beat in egg and vanilla, then milk. Sift flour, baking powder and salt over; beat batter to blend. Drop batter by scant tablespoonfuls over hot fruit mixture. Put some ham or turkey into a grilled cheese sandwich. Hamburger (or ground pork or sausage or a mixture) makes chili, sloppy joes, spaghetti, tater tot hotdish, tacos and a myriad of other things. Pork chops in cream soup/milk mixture makes its own gravy. Submarine sandwiches. Meatball subs using frozen meatballs & canned marinars sauce, topped with cheese, onion, green pepper or whatever you like. A plain old sandwich with good deli meats and cheeses on a good bread or bun is a treat. Canned and frozen veggies are a good assistant. How about a veggie tray? Chef's salad? Nachos can be hearty if you top it with some cut up cooked turkey, chicken, hamburger or what-have-you. Making lasagna isn't difficult. The pasta package has a good basic recipe and just add what your like. For that matter making a meatloaf isn't complicated. A good quality sausage and some rice or sauerkraut if you like it is easy. Decent hot dogs decked out how you like them. The whole point is you're not going to have YOUR cooking. Hopefully you'll enjoy a change of menu during your recuperation. BTW, putting a turkey in the roaster, or a ham or even a pot roast doesn't have to be that difficult or complicated. Bake some potatoes, salad or frozen/canned veg can be a source of pride for an accomplishment. Do you have any community cookbooks? Church, community or school fundraiser types? They usually have a lot of simple, homestyle recipes and give good detail if needed. Best wishes for a speedy recovery!

This is the one I make when company comes and it's easy! You can easily add Kahlua or Amaretto to this but I wouldn't...it's just perfect the way it is. It has a great mouth feel. Dark Chocolate: Milk Chocolate: White Chocolate: 6 ounces semisweet (or milk or white) chocolate 3 tablespoons butter 4 medium, very fresh eggs, separated 1/2 teaspoon cream of tarter 2 tablespoons sugar 2 tablespoons powdered sugar 1/2 cup cold heavy cream 1/2 teaspoon vanilla whipped cream and chocolate curls; garnish First, place a stainless steel bowl and a wire whisk in the refrigerator. Then chop chocolate into small pieces and place in a medium, non-stick skillet along with the butter; melt over low heat stirring constantly. Remove from heat to cool slightly. In a medium size bowl, beat egg whites until foamy. Add cream of tarter and continue to beat gradually adding 2 tablespoons granulated sugar until it forms stiff peaks; set aside. Stir the egg yolks into the slightly warm chocolate in the skillet, 1 at a time. Using the chilled bowl and whisk, beat (donÂt use a mixer) 1/2 cup heavy cream until it begins to foam and gradually add 2 tablespoons powdered sugar then vanilla. Continue beating just until stiff peaks; do not over beat. Gradually and gently fold chocolate mixture into beaten egg whites then gently fold that mixture into whipped cream in cold bowl. Why not get some kind of meal already cooked, frozen and ready to heat? Trader Joe's and Costco have lots of choices, as do local grocery stores.

Does she has a WalMart close by?
They cook the best rotisserie chicken: homestyle, lemonpepper (yummy), Mediterranean!
So many things she can do with baked chicken!
And so cheap! So tasty!

Stuffed pita sandiches, white chili, chicken salad, chicken ala king, etc. And of course Sandy's buffalo chicken dip!
One chicken can go a long way! Well, for one!

cabbage rolls made up on a Sunday and portioned into one or 2 ppl sized servings.

lasagna done the same,made family sized and portioned.

manicotti

chicken bbq'd in the oven and portioned

scalloped potatoes

pasta,steak that has been cooked and sliced thin on a diagonal,add onions,green peppers and a good quality spaghetti sauce...really good!

lazy mans cabbage rolls works good too

All of the above are best done in large quantities and then portioned into containers that travel and reheat well

then there is good old Kraft dinner!!*S*S*S*S*

I make my goulash the same way.

1 can of Cream of Mushroom soup
skinless, boneless chicken breast
boil in bag rice

put chicken in a baking pan...dump can of soup over chicken. Bake at 350 for 45 minutes(or until chicken is done).
Boil bag of rice in water

I love this dish. I serve with a green veggie. I put the chicken with soup over rice. The soup is the gravy and this is just sooooooo good.

Baked chicken.. season and peel potatoes and onions and cream of mushroom soup on top. Bake
You can also do that with pork chops and it's soooo good and easy.

I think a can of Cream of Mushroom Soup can do lots of stuff...lol

It is good with country fried steaks...or boneless pork chops!!!

I posted this last week....

Nothing easier or quicker...

Potato Soup

6 cups water
Diced onions
30oz bag of frozen hash browns
The kind that is cut in little squares
They sometimes have green pepper and onions in them.
Bring to boil, Reduce heat
Add 2 cans of cream of celery soup (do not dilure)
Stir in 4oz Velvetta cheese,cubed. Stir till melted
Add one cup of sour cream.
Salt and Pepper

Lazymans cabbage rolls is where you brown your hamburger, add rice and chopped or sliced cabbage, pour your tomato soup over it and bake it that way.

Cooked egg noodles, cubed ham or chicken or a can of tuna, a can of cream of mushroom or cream of chicken or cheddar cheese soup, any frozen vegetables, mix together in a casserole ,add a half cup of milk,optional-top with breadcrumbs, shredded cheese or crushed crackers,bake uncovered at 350 for 30 to 45 minutes. Comfort food.

I'd be cautious about some of the comfort foods. I can say when I went out on my own, I ate a lot of that because I liked it. I found it was an easy way to put on weight. The chili is probably a lot healthier even though the other recipes look tasty.

I'd suggest making up a big batch of salad fixings and varying what she adds to it. For instance, that deli chicken would be great as part of a chicken meal one night and then salad another. Different additions such as bell peppers, cranberries, oranges, various nuts, etc., vary the taste.

For a side, I'd get some single serve microwaveable veggies from the freezer section such as brussel sprouts, cauliflower, broccoli, etc.
