I have done two crock pot meals this week. One a stew with frozen beef, added potatoes and whatever veggies I could find. Yesterday I did a pot of pinto beans with the ham bone left from Christmas. Today it will be mac and cheese.
Just good warm comfort foods for cold weather!

I am making these today:

Chicken Muffins

2 tbsp lemon juice
2 9.75 oz canned white meat chicken (packed in water, well drained)
1 c med white sauce (approx)
¼ c plain ff yogurt
â c chopped celery
2 T minced dried onions
1 ¼ c cracker crumbs.

Add lemon juice to chicken. Place cracker crumbs in bowl. Add white sauce, yogurt, celery, onion flakes, dash of pepper. Mix in chicken/lemon juice. Let sit in fridge to soften onions for approx. 30 minutes. Bake in greased muffin/cupcake pan. Bake 30 minutes in a preheated oven/350 degrees.

Usually get 12 muffins.

Reuben Mini-meatloaves

1 lb very lean ground beef
1 sm can sauerkraut, rinsed/drained (this removes a lot of the excess salt)
â c Quaker oats, soak about 5 minutes in about ¼ cup milk
1 egg
1 T minced dried onions
1 T dried parsley flakes
½ tsp thyme
salt/pepper to taste
3 T ff miracle whip
2 T ketchup

Mix together all but beef and sauerkraut. Add sauerkraut and mix well. Add ground beef and mix only until it holds together. Divide into 8/10 mini-loaves, place in a baking dish. Bake covered for approx 30/45 min @375 degrees, then remove cover and bake an addt'l 10 to 15 min or until done.

Not even going out the door, today. Made myself, FAINT, tuna salad, and my home baked pita chips.

Need to get in closet and put out things for cruise, but that closet is not insulated and soooooooooo cold!

Well, I have polish sausage , apples and kraut in the slo cooker to take to senior pot luck tomorrow. Just made chicken pot pie for company supper tomorrow night, and mixed up carrot/orange jello salad to go with it. Tonight it probably be fish sticks and hash browns. I'm pooped. Dottie

Shirley, have you ever made meat muffins?

Take about half a pound of lean ground beef, cook with onion, drain, stir in some ketchup, mustard, whatever. Not too soupy.

Take 6 canned biscuits, pat out in your hand, then mold in greased muffin tin, add couple TBL meat, bake in oven per directions on can. Take out, top with some grated cheese, back in oven to melt. Let sit on counter 5 minutes before removing from pan.

GS used to love for grandmother to make him meat muffins. sigh

Glenda, yes I've made something similar to those. I also make one using a box of stuffing mix added to hamburger, plus a few other ingredients, bake in muffin tin. I often make things like this and freeze them individually to be reheated in microwave later on.

I madeGreen beef enchiladas last night.DS is re heating a couple right now for lunch.They sure smell good! Easy to make too.
Green Beef Enchiladas
2 lbs. extra lean ground beef (Boneless,skinless chicken breast can also be used,cooked and shredded)
10 medium size flour tortillas or 12-15 corn tortillas.I used flour last night and they were delish!
About 4 cups shredded Jack or cheddar cheese or a mixture of both.
1 large can green enchilada sauce.(The kind made with tomatillos and green chilies).
Cook the ground meat in a pot with a little water if needed.Season with salt,pepper,garlic powder and about a tsp.cumin.Drain off any liquid.
Heat the flour tortillas in the microwave just to soften them a bit to make them easier to handle.I just open the bag and throw bag and all in for 60 seconds or so until they are warm through.If using corn tortillas heat them in hot oil for a few seconds and drain on paper towels.
Place the meat on the tortilla with a little shredded cheese and roll up tightly.Place rolled tortillas close together in a casserole sprayed with non stick spray.Pour the can of sauce over the top and sprinkle with desired amount of shredded cheese.Cover with foil and bake in a 350* oven for about 20 minutes.Remove foil and continue baking until cheese is bubbly.

Another easy one that I just made a few days ago.
Ritzy Chicken Casserole
About 6 cups cooked and cubed boneless,skinless chicken breast.I season the chicken with salt,pepper,garlic powder and poultry seasoning,place in a baking dishsprayed with non stick spray and bake at 375 uncovered for about 30 minutes or so until done.Pour off the liquid and set the dish aside to use later for the casserole.Let the chicken cool,then cut into small cubes and spread evenly into the baking dish.
Mix 1 can cream of chicken soup and a cup of sour cream together and spread evenly on top of the chicken.My original recipe calls for 1 cup of mayonaise.I substituted sour cream once when I didn't have mayo and everyone here likes it better.It is good either way so it's your preference.
Crush 1 sleeve of Ritz crackers finely in a plastic zipper bag or you can use a food processor.I use my little food chopper for this and it works great.
Melt 1 stick of butter(Has to be butter,not margerine.Too much water content in margarine) and add to the cracker crumbs,mixing well.Spread the crumb mixture evenly over the top of the soup mixture.Bake uncovered in a 350* oven for 30-40 min. or until until the topping is lightly browned.

Hmmmm! Nita was visiting here and I've been eating out. LOL! I'm getting anxious to have saurkraut and smoked sausage on a bun. Easy to make.

I am being lazy today. Cooking in the crockpot, chicken with bbq sauce, rice cooking in the rice cooker, and vegetable steamers in the microwave. Chocolate cupcakes that my granddaughter helped me bake yesterday.

I made a pot of split pea soup yesterday. Comfort food for cold weather.

I've been making soup lately. DH has decided not to eat any meat so its all veggies. We are trying out acorn squash, & butternut and I just love spaghetti squash. Just add a another veg & a potato and your good to go.

I made a huge pot of soup for dinner tonight (I don't know how to make a small pot!!). I used a big ham bone with some extra meat, potatoes, carrots, cabbage, celery , tomatoes and pasta. It is delicious! I'll put some in the freezer and share some with the 90 year old widower who lives across the street. Bettye/AZ
