Help with Sticky Finger Chicken

I LOVE the Sticky Finger Chicken recipe that I got off of this forum... and have made it numerous times. The last time I made it, I roasted two chickens and it came out wonderful.

My question.... I want to roast 4 chickens at the same time. What is the best way to do this without over browning the chickens on the top rack? Obviously, I would move the top chicks to the bottom and vice-versa at some point in the roasting, but is that going to be sufficient?

I have a convection oven (which I must admit, I don't use the convection that often)..... would this help to eliminate the problem? If so.... do I still roast them at the same temp, or decrease the temp just a tad with the convection?

Also.... do you think that a 9x13 glass baking dish lined with aluminum foil will hold all the juices from two chickens?

I realize that most of you are very accomplished chefs.... and I have been trying hard to learn as much as I can over the last several years... so please bear with me as I ask silly questions!

If you are referring to the Sticky Chicken recipe I posted over on the Recipe Exchange, it is hard to say not knowing the size of your oven or the size of the chickens. If you can put two chickens side by side in a 13x9 pan, you should be able to get two pans on one oven rack at the same time. I think that a foil lined pan will hold all the juices from 2 chickens.

Can't help with the convection oven, but I don't think I would lower the temp. The birds may cook a little faster, but that wouldn't hurt anything. Do check them with a thermometer so they don't over cook.

I'm going to fix a bird myself this weekend. Here is the recipe I posted:

A high heat roasted chicken is indeed delicious, but I tried a new recipe for slow/low roasted chicken yesterday that is really good also - and won't smoke up your house!

Roasted Sticky Chicken
Recipe By :Sharon Worster Personal Chef's Network

3 pounds whole chicken
2 teaspoons salt
1 teaspoon paprika
3/4 teaspoon cayenne pepper
1/2 teaspoon onion powder
1/2 teaspoon thyme
1/4 teaspoon white pepper
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
1 large onion -- quartered

Combine all spices together in a small bowl. Rub mixture into chicken WELL, inside & out, patting into the skin & try to make it evenly distributed. Put in a large bag & refrigerate overnight. If you don't have time for this step it will still be delicious!
Just before roasting, stuff the cavity w/ onions. If the onion will fit into the cavity whole, I do it this way as we love baked onions.
Roast uncovered @ 250* (YES, THAT'S 250*) X 5 hours (YES, THAT'S 5 HOURS). Baste often w/ pan juices until they caramelize in the pan. Chicken will turn golden brown.

Sharon's NOTES : These freeze GREAT & I recommend you make several of them at one time since your oven is on for so long! This chicken is to die for & falls off the bone!!!

For Heating: You can bring these straight from the freezer if you want! I've done this for years in my own home & here's how I do it. From the freezer: Put in the microwave on a plate covered w/ papertowels & heat on high X 5-7 minutes. Then, place in a 350* oven X 15-20 minutes or until hot throughout.

Or, you can thaw in the refrigerator overnight, wrap in foil and heat in a low oven for 20-30 minutes.

Thanks teresa.... it is indeed the recipe that I am talking about! I LOVE it and it is OH so easy (except that you really have to plan way ahead because it takes so long to cook).

You mentioned in an earlier thread that you occasionally freeze a Sticky Finger Chicken after you have cooked it.... do you freeze it whole or break it apart in pieces (wing, leg, thigh, breast)? And... after you thaw it out, do you just microwave it to heat it up?

Thanks so much for posting this wonderful recipe. Baked chicken is my all time favorite meal, so this is a keeper for me. Now that I have found this recipe, I buy 4 chickens at a time when they are on sale ($.69/lb at Food Lion yesterday) and I usually freeze three and bake/roast one.

My family (Mom, Dad, brother, SIL and kids) may be coming over this weekend and I thought I may roast all 4 birds at one time, but didn't know how successful it would be to attempt all 4 at the same time.

Thanks for the help! BTW... my oven would fit all 4 with no problem, but the top ones would be close to the top burner, that is my concern with the over-browning.

It does sound like it could be prolapse--that's where a bit of her oviduct gets pushed out from her straining too hard to lay an egg. It's not uncommon, but it is gross and a bit shocking to find her insides suddenly on the outside. You did the right thing separating her since the other chickens might have pecked at it and made it worse. You can help her out by getting a tube of Preparation H and applying a bit to your finger, and using the lubed finger to GENTLY push the tissue back up inside her. You may have to do it a couple of times the first time, and may have to repeat it a couple of times throughout the day. The Prep H will soothe the tissue and shrink the swelling. She should be OK, but wait until it's returned to normal before returning her to the flock. Watch her to see how she lays her next egg and check to make sure it hasn't reoccurred. She should be OK, but keep an eye on her in the future. Velvet ~:>

BrendaSue, I'm glad to hear that things seem to be okay. To answer your question, you do not need a special thermometer to check their temp. Just a regular thermometer--either digital or the old fashioned mercury kind is fine. If you use a mercury thermometer, it is wise to attach a 6 inch string to the end with the hot glue gun, and attach a clothespin to the string. To check their temp, lubricate the thermometer (I spit on it, but you can use KY Jelly or vaseline or mineral oil if you prefer), then insert it into the horse's rectum. If using the mercury thermometer, insert it until there's only about 1.5 inches sticking out, then clip the clothespin to the horse's tail and wait 3 minutes, remove, and read. If using digital thermometer, insert it about 2 inches into the rectum, and you have to stand back there and hold it until it beeps the ready signal. Don't use the mercury thermometer unless you have the string attached--they have been known to "disappear" into the horse's rectum--NOT a good thing! Normal temp for an adult horse is 98-100. I would consider 101 to be a mild fever in an adult, and 102 or above is a fever for sure. In a yearling, 101 would be pretty normal, and anything above 102 would be a fever. In a foal, normal is 100-102, and above 103 would be a fever. Horses are like people, and some horses "run hot" all the time, so if you really want to be in tune with your horses, check their temps several times on different occasions to get a baseline normal. If you want to check their pulse, you can feel in the groove under their jaw--this can be a bit tricky and it's good if you can get somebody to show you how. Average pulse for an adult is 30-40 beats per minute, but for a younger horse, it is higher (yearling is 50-60). To answer another comment you made, bellyache is the same as colic (just like a baby). Colic can be caused by gas, constipation, a twist in the gut, diarrhea, spasmodic colon, etc. And just like a baby, a horse can't tell you where or why it hurts, and that's what makes it so complicated. To be honest, in my opinion, I would have worried more about founder than colic with this episode. Somebody commented that it takes more than one time in the grain bag to get foundered, and I disagree with that statement (not trying to start a fight here, I just disagree). You stated that their hooves were warm, and that is a symptom that a horse is trying to founder. Horses' hooves are usually cool to slightly warm, even in the summer they stay pretty cool. It's a good idea once things get back to normal to go feel their hooves and see what normal feels like (again, some horses' hooves are normally warmer than others). If I were you, I'd continue to keep an eye out for signs of founder. If you see them standing with their front feet "parked out" in front of them--stretching them out so their feet are more under their head than under their shoulder--that is a sign that they are in pain from founder. You can look up founder (or laminitis as it is also called) on Google and see the causes and symptoms. Glad to hear that things sound okay. I heard a quote once that said "Horses spend 99% of their time trying to kill themselves, and we spend 99% of our time trying to prevent them from succeeding." Keep us posted!

Paula Deans's chicken nuggets 2 cups crushed sour-cream-and-onion-flavored potato chips 1 egg 2 tablespoons milk 6 chicken breast fillets, cut into 1 1/2-inch cubes 1/3 cup butter, melted Honey Mustard, recipe follows Preheat the oven to 350 degrees. Spread the crushed potato chips in a shallow dish. Beat together the egg and milk in a shallow bowl. Dip the chicken cubes into the egg mixture and then dredge them in the chips. Place the chicken nuggets on a baking sheet and drizzle with melted butter. Bake for 15 to 18 minutes, or until golden brown. The chicken nuggets can be frozen after baking. Serve with your favorite sauce, such as honey mustard or ranch dressing. Honey Mustard: 3/4 cup mayonnaise 3 tablespoons honey 2 tablespoons yellow mustard 1 tablespoon lemon juice or juice from 1/2 lemon Horseradish, to taste 2 tablespoons orange juice (more or less as needed) Combine all ingredients except orange juice; stir well. The freezing suggestion came from the recipe source. I don't usually freeze cooked chicken; I just find a way to use it up by making chicken fried rice, chicken and dumplings, chicken noodle soup, quesadillas with bits of chicken, etc.

I would rotate the chickens half way through the roasting time if the top ones appear to be browning to fast. Also, you could tent them with a big piece of foil.

I'll have to check out that Food Lion special!
