Today we are cooking (for the first time) a turkey on our wood pellet grill.

Rubbed with veg. oil and some spices. Stuffed with an unusual combo of cantaloupe and pineapple. Right now our refrigerator is overloaded with fruit so DH decided to put some in.

Here is the grill.

Have it up to about 280. Will cook for about 7 hours. 1/2 hour per lb.

Please note we do not park vehicles on the lawn. Its just there to be washed in the shade.

Its smells sooo good. My mouth keeps watering. With the windows open the house is filled with the aroma.

Well, I've had about a day to think it over, do research, and think some more. As good as the Traeger looks, I am going with the Weber Q 300. A bit because of the price, but mostly because of the great experience I have had with Weber charcoal grills over the years. I usually use my big grill to cook with wood. If im cooking then i am cooking alot. day 1: I find the person I want and freeze- day 2: I take a full carcus from the fridge allowing it to thaw for the day, cut into large pieces and soak in seasonings overnight- day 3: I setup grill by loading it with quarter cut logs usually 4-5 (depends on your grill), set a fire and allow entire blocks to burn until half covered in ash n coal, then i chip off coal pieces and push to one side and the larger pieces to the other side. i cut up the body into pieces and put head into open flame to burn off any hair,i only vent the side with large wood pieces and cook on the other side, only using hotter side to sear or burn off hair. I slow cook all day and add wood only if im cook 2 or more persons! ps good coating: mix one cup soy, one cup worcestershire, one cup italian dressing, 3 chopped bonnet peppers, 4 cloves garlic, 1/4 cup brown sugar, 1/2 cup ketchup, 1/4 cup thyme, 2 chopped onions, 2 bell peppers and 4 chipoltes!! mmmmmmmmmmm pss: the younger the meat the more tender- psss: just kidding but would work well with pork ;)

I agree with the above except to say that a mild wood like apple or alder will give you a mild smoke. Hickory or mesquite will give you a bit more in your face smoke. I prefer alder and pin cherry, two weed trees around here. And I split any chicken or turkey I'm smoking. Gets you way more surface area to get that smoke into/onto. Simple to do, just cut down both sides of the backbone, remove and flatten the bird. You will hear the breastbone crack. Plus a 2D bird smokes faster than a 3D bird. Lastly, properly smoked you will get what is called a smoke ring in the flesh. That can be fairly pink. Do not check to see if its done via sight, use a thermometer. The pink will be right under the skin, not at the inner bones. Tough to do easily on a gas grill as they are too hot. The inexpensive water smokers or the vertical propane smokers sold in hardware stores work real well and most of them have a recipe book that includes a bird method. And aren't too expensive either. You must know, also, that once you get into smoking stuff there is no going back. Its like owning a boat...bigger, better, more. I had four smokers rattling around my yard at one point. Now I'm down to two, plus grills.

2Many, I was thinking about how to use the 12" tube for shorter smokes. First thought was to loosely crumple some aluminum foil and stuff in as a space filler and then add pellets to fill. (Except getting foil out would be a bit of a pain.). Thinking that a partial loose fill might cause the pellets to burn too fast? After I ended up with that huge 40# bag of pellets decided not to worry about it; I'll just fill it up and let 'er burn out past the time I remove the food. With pricier pellets, yeh, I'd try conserving the fuel. Course this then strengthens the argument for adding a 6" tube...for shorter smokes and adding part way thru longer smokes. Then again, I was pondering last night why something like a tomato paste can or two with a bunch of holes punched in it wouldn't work... (from a brand with a removable paper label.) Pulled a couple of chicken halves out of the freezer last night. Going to brine overnight and smoke 'em tomorrow. Thinking I'll try to confine the smoke a bit better with the chicken going on what you learned with your bird. I bought the chicken already halved (was in the reduced 'Use today or freeze' bin--perfect, I thought for experiments!) so the halves may be a little more receptive to smoke than a whole bird? Also, more prone to drying out but brining ought to help offset that... This is actually kinda' fun to do. Needed that cause I get burned out on cooking!

We looked on the Brinkmann website for a recipe. It was very vague but said cook 8-12 hours.

Found a video on youtube. It was a little more involved. Tried to follow it which was basically cooking at about 280 degrees for 1/2 hour per pound.

7 hours later.

Sparky waiting for some turkey.

Dessert sort of. DD made these to take to school tomorrow. She let us each have one.

The turkey was good and pretty moist but a little over done.
Next time will keep on low even if less than 280 degrees. We did use a meat thermometer that showed 180 degree with still 2.5 hours to go. DH was concerned it wasn't right so continued to let it cook. The skin did crisp up right away which sealed in alot of the moisture. There were 2 cans of water inside the grill with the turkey.

I do have a question about the skin but will start another post as its about turkey in general.

Result: Will slightly overdone everyone still really liked it. DS said is was the best turkey ever.

That's a fine looking bird.

Regarding cooking time, the best is to check temperature with an accurate thermometer, especially if you have stuffing inside.

I think the thermometer is accurate but we don't have complete confidence is using it. It got done so much faster that the instructions said it would. I know I need to trust the thermometer. We need more experience using it.

That looks perfect, a showcase bird! Cooper (my dog) would be drooling right alongside Sparky, that's for sure.

Definitely trust the thermometer. Not that it would keep me from eating it, pass a drumstick, please!

Grill is the only way I've done a turkey in some time. Never timed mine just let the charcoal burn all the way out... probably 4-5 hours. Does not make a picture perfect turkey but a leg bone will pull off when it is done. Mine usually fall apart getting them off the grill... sorta gotta roll it into a pan. Boiling the bones and skin after you are done eating off it makes a fine broth. Broth is smokey so it makes fine bean soup. Strain it to get the skin and bones back out.
