Egg Foo Yung Recipe & Technique

I don't know the exact spelling of this dish but I made it tonight and it was fantastic!! No WOK required!! I looked online for recipes until I was sick of reading about this. I did learn technique from reading but could not replicate the taste of my local Chinese take-out. Here is what I came up with.
** 2 cups white rice cooked and kept warm
** 1/2 pound of bean sprouts - really fresh - rinse 3-4 times in COLD water
** 1 medium sweet onion chopped in 1/2 inch dice
** Vegetable oil for saute onion & bean sprouts
** 8 eggs beaten VERY well
** 3/4 pound medium fresh shrimp peeled and deveined not frozen precooked shrimp
** 1/3 cup all purpose flour
** 2 TBSP soy sauce
Clean and devein the shrimp removing the tails also. Boil 3 cups of plain water and remove pot from stove or bowl from microwave. Add the cleaned shrimp to the boiled water stir well and set aside - do not return water to boil.
Saute the chopped onion in about 2 TBSP of vegetable oil until softened. Add the bean sprouts to the pan with the onions and saute another 1 minute. Pour onions and bean sprout mixture into a bowl and set aside.
Beat all 8 eggs very well and set aside.
In non-stick fry pan heat 4 TBSP vegetable oil on medium heat until it shimmers then add all of the flour. Stir the flour & oil mixture until it is golden in color - you do not want it to brown. When golden add """about""" 2 - 3 cups water and keep stiring until it starts to thicken. If it gets too thick add more water until it is the consistency of gravy. At this time add the soy sauce. Pour this "gravy" into a bowl and set aside.
Drain the shrimp.
Rinse the non-stick pan and add 1-2 TBSP of vegetable oil. Heat the oil until it shimmers.
Put 5-6 shrimp and 1/2 cup onion/bean sprout mixture into the pan with the hot oil. Stir briefly then add 1/3 cup of the beaten egg mixture. Cook over medium heat until the egg has completely set (no need to stir). After egg has completely set turn the "pancake" over and cook the other side. "Pancake" will be golden in color.
Serve pancake over hot rice with some of the gravy poured over top. If you want Cantonese style omit the gravy completely.
I made a total mess in the kitchen but it was really good and not a morsel was left over!
