Comments (15)One more thought - or recipe to put away for "someday". I made this for a brunch about a year ago and it got raves from everyone. Bonus, it was really easy to make and has a dramatic look! Mushroom Spinach Souffle Roll Ingredients: 4 T. butter 1/2 cup flour 1 tsp. salt Pepper to taste 2 cups milk 6 eggs 2 bunches cleaned fresh spinach OR 2 10-oz packages frozen spinach 1 lb. mushrooms 8 oz cream cheese Salt and pepper to taste Instructions: Melt butter in a sauce pan, blend in flour, salt, and pepper. Whisk in the milk, bringing the mixture to boil. Stir constantly until thickened. Cool mixture. Add the egg yolks and beat. In a separate bowl beat the egg whites until stiff. Fold them into the cooled sauce. Line a greased jelly roll pan with waxed paper, then butter and flour the waxed paper. Pour the souffl� mixture over the waxed paper, spreading lightly to form an even layer. Bake in a pre-heated oven at 400 degrees for 30 minutes or until nicely browned. While souffl� is baking make the filling. Saut� the spinach and mushrooms in butter until tender and liquid has been reduced. Add the cream cheese and mix well. Season to taste. Set aside but keep warm. Turn souffl� immediately onto a towel. Carefully remove waxed paper. Roll up lengthwise with the towel inside. After a minute or so, unroll. Spread filling evenly over the souffl�. Roll up jelly roll style with the help of the towel. Serve immediately! This can be made the night before and reheated at 325 degrees in the morning. ******************************************************** Roasted Red Pepper Coulis Ingredients 3 large red bell peppers 3 tablespoons extra-virgin olive oil 1 medium shallot, thinly sliced 1 tablespoon sherry vinegar or red wine vinegar Salt and freshly ground white pepper Directions 1.Roast the red peppers directly over a gas flame or under the broiler, turning occasionally, until the peppers are blackened all over. Transfer the peppers to a bowl and let cool completely. Peel the peppers and discard the skins, seeds and cores. Coarsely chop the peppers. 2.In a food processor, combine the peppers with the olive oil, shallot and vinegar and puree until very smooth. Comments (17)I think I used too much vinegar in the first batch - all the eggs had dark grey marks all over them. Some in spots and some where the shells had cracked. I skipped the vinegar in the second batch, and it was fine. My MIL tried to give me a square egg mold once! If you have a lot of them, it's cool, but one at a time is deadly! Thanks for your help. Comments (7)I made these tonight and they turned out great! I used 1 lb. of Jimmy Dean sausage and 1 bag of the broccoli slaw mix as it looked more appealing than the coleslaw mix at my store. I added one small thin sliced onion to the pan when cooking the slaw mix with the meat. When everything was cooked, I mixed 2 TB soy sauce with 2 TB water, stirred in 1 TB cornstarch until smooth and added that to the hot mixture and stirred until it had thickened. Then I let the meat/veg mixture cool a little before I made the egg rolls. Remember, everything in the egg roll is completely cooked, so you just need to fry them up to crisp and brown the egg roll wrapper. I followed the suggestion of a yahoo group member and drained the fried egg rolls standing up in a deep bowl lined with paper towels. This worked great! Comments (12)And although I'd go light on the chilis, Clarissa Dickson Wright of The Two Fat Ladies had an interesting version that I had forgotten about until I saw this thread. She said this is a traditional Mexican breakfast and who am I to argue with the 2FL? Seems a lot better to me than simply putting salsa on eggs. I'll have to check with a couple Mexbuddies and see if it's anything they remember or how they remember it, if they do. Huevos Rancheros (Ranch Style Eggs) Brown some lean minced beef, add chopped onion, garlic, some roughly chopped tomatoes, salt, pepper, Worchestershire Sauce, water, roasted (seeded) green chilis and simmer about 10 min. Then fry some flour tortillas in oil until soft and hot, but not crisp - you're not making tacos. Fry eggs, place on the tortillas & top with the chili sauce. And she said to "Wash it down with a pint of ale." As I said, who am I to argue with the 2FL? Though I might sub some breakfast sausage for part or all of the beef it should be a hearty breakfast and especially good on a cold morning. And I had forgotten, this inspired me one time to put a couple eggs on top of some chili. Was interesting and pretty good. I should try that again.
